This short exchange between Patrick and I tells you a lot about us.⁣

To highlight a few of his many swoon-worthy qualities:⁣
✹ He's quick to celebrate the wins and successes⁣
✹ Content is his default setting⁣
✹ He's great at helping me find the bright spots when it's hard to find any⁣
✹ Did I mention he does the laundry!?⁣

I, on the other hand, struggle consistently with stopping to celebrate contentment.⁣
⁣
Sure, things are great, buuuuut I want them to be even better! TBH, this is something I've struggled with, 𝘢𝘯𝘥 𝘀𝘰𝘯𝘵𝘪𝘯𝘶𝘊 𝘵𝘰 𝘞𝘰𝘳𝘬 𝘰𝘯, for as long as I can remember.⁣
⁣
▶ Set a goal. ▶ Pursue said goal wholeheartedly. ▶ Achieve said goal. ▶ Look ahead for the next goal. ▶ Repeat.⁣
⁣
And while achievement, growth, drive and passion are wonderful, if we don't learn to pause and enjoy the journey, we rob ourselves of the experience of life!⁣
⁣
Do you struggle with the practice of choosing happiness and contentment too?⁣
⁣
If so, here are a few habits that have helped me choose happiness and contentment over 𝘣𝘪𝘚𝘚𝘊𝘳, 𝘣𝘊𝘵𝘵𝘊𝘳, 𝘮𝘰𝘳𝘊:⁣
⁣
1⃣ Celebrate the wins. No matter how small. Train your brain to look for the successes. ⁣
2⃣ Pause and regroup when you're feeling down or critical. Stop, breathe and remind yourself of what's going well. ⁣
3⃣ Take time to appreciate the present moment. Don't let your brain space be taken hostage by things that need to happen or have happened. Be still and enjoy the now. ⁣
4⃣ Prioritize the small things with equal intentionality as the big things. Walking with a loved one, spending time breathing in fresh air, taking a bubble bath. These things often feel less important than the other things on our to-do list but nothing could be further from the truth.⁣

✹SUNDAY NIGHT ROUTINE ✹ I cannot stress enough how important it is to take a little time on a Sunday night to do some preparation and get organised for the week ahead - for me it can make or break a positive start to the week! 🍜 Plan what meals I’m going to cook
🛍 Do a weekly food shop 🧺 Do a load of laundry, making sure my favourite bits are clean
🍳 Meal prep - generally I’ll try to do most of my main meals for the following week
📝 Have a brain dump of some goals/things I’d like to achieve and need to get done that week 💆🏌‍♀ Prioritise a bit of ‘Kate’ time - this can come in the form of a hot bath and pamper, some ice cream and Netflix, Foodie or Fitness YouTube videos, reading a book or just calling it a night and getting any extra hours kip 🀷🏌‍♀
Since I’ve got into this routine, I sleep so much better on a Sunday night (we’ve all been there tossing and turning, anxious at what the week has in store) and I wake up on a Monday morning genuinely happy and excited to start a new week ☺ If you suffer with the Sunday scaries and never feel quite ready for a new week to start, create your own Sunday routine and I guarantee you’ll have a much more positive mindset and attitude when that inevitable early alarm goes off on Monday morning! #sundaynight #eastersunday #sundaynightprep #preparation #sundayroutine #healthyhabits

לה׹גלים ישנם יתךונות ׹בים;הם מ׀נים משאבים קוגניטיביים אשל הילד עבוך למידה של תחביב או תחום עניין חדש. בנוסף, ה׹גלים מעניקים תחושת בטחון ושליטה וע׎י כך מ׀חיתים חךדות והתנהגויות בלתי ך׊ויות.

Easter Brunch Bake

Ingredients:
6 eggs Eggs, Whole
1 cup Morningstar Grillers Recipe Crumbles
1/2 cup Raw Mushrooms, Portabella
1/2 cup Raw Tomatoes
4 oz Cheese, cheddar, reduced fat, shredded
1/3 cup Raw Onion
5 sprays Non-stick Cooking Spray

Preparation:
Additional Ingredients: 3 Tbsp. Plain low-fat Greek Yogurt

1. Prep the ingredients: Chop the mushrooms, onion, and tomatoes.
2. Beat eggs and Greek yogurt with whisk until well blended.
3. Pour mixture into greased 8x8” baking dish.
4. Bake at 350°F for 10 minutes, until egg mixture is softly set.
5. Meanwhile, cook recipe crumbles, mushrooms, and onions in large skillet on medium heat for 6-8 minutes, until crumbles are done. Stir occasionally.
6. Drain once cooked.
7. Reduce oven temperature to 325°F.
8. Spoon tomatoes over egg layer. Cover with recipe crumbles mixture and cheese.
9. Bake 30 minutes until center is set.

Here's my gorgeous allotment. How lovely have the last few days been?

I've had my mum helping and we have done loads of work. Strimming all the spring growth has been the most satisfying as our space has grown so much. We have managed to create a new border over a former nettle patch (not sure how weed free it will be 😬), we have wood chipped areas and started a wild flower area. The greenhouse is nearly ready for the tomatoes and chilli's and I've had a surprise harvest of some over wintered onions. Right now, unbelievably, I'm winning. I know this won't last.

Taking advantage of leftovers from our egg hunt yesterday, and making a few lunches. I did a thing and joined a gym, and committed to the 6am class time. Knowing that it'll take a bit to get into a new routine, I didn't want to end up rushing and stressed trying to get BACK out the door for work. Using what I had, I made 2 hamburger salads, and included some berries. I'll pack my dressing separately so my lettuce doesn't get soggy :)

CINNAMON BUN KETO CHEESECAKE! 🀯

RECIPE 8 pieces:
CRUST
1 1/2 cup (3,5 dl) almond flour
3,5 oz (100 g) butter
4 tbsp erytritol (sukrin or sötströ)
vanilla extract
FILLING:
8 Oz (2,4 dl) cream cheese
1/2 + 1/3 cup (2 dl) heavy cream
1/2 cup (1,2 dl) erytritol
1/2 tsp cinnamon
1/2 tsp cardamom
TOPPING:
1/4 cup (0,6 dl) macadamias
1/3 cup (0,8 dl) coconut chips
1 tsp coconut oil
1 tsp cardamom
1 tsp cinnamon 
1 tbsp erytritol
CHOCOLATE SAUCE:
1/2 cup (1,2 dl) cream
1/2 cup (1,2 dl) cocoa powder
1/2 cup (1,2 dl) erytritol
Pinch of salt

Macros per piece: 450 calories, 2 g net carbs, 47 g fat, 8 g protein.

INSTRUCTIONS:
Set oven to 350°F (175°C). 1. Melt butter. Mix almond flour, sweetener, vanilla extract and butter until a well combined but slightly crumbly dough. Press dough into bottom of a round baking pan. Bake for 10 minutes until golden, let cool.
2. With an electrical mixer, mix cream cheese, cream and sweetener until thick. Blend cinnamon and cardamom separately and start adding little by little to the cream cheese mix and taste before adding more. I used about 1 tsp total but it’s very personal how much you prefer. Add too much and it will get very strong. 
3. Pour the mix over the baked crust and put in the freezer for 1-2 hours.
4. Blend ingredients for the chocolate sauce in a saucepan and whisk together on low heat. Let simmer for a minute while whisking. 
5. Roast macadamias and coconut chips in a pan with coconut oil, spices and sweetener. Sprinkle on cheesecake before serving.
6. Cut a big piece and pour chocolate over and take off!💥 .

It could be argued that it’s the most critical aspect of your health care routine. You can eat all of the healthy salads you can fit into your refrigerator, but if you aren’t taking care of your mind and body, it’s all in vain.⁣

Practicing self-care comes in many forms such as exercise, meditation, healthy eating, skin and hair care routines, making time for yourself to do what you love, creating healthy boundaries, and anything else that gets you to take care of yourself and your needs. 🀞‍♀🧘‍♀🛀⁣

Practicing self-care also helps you reduce stress, create a healthy work-life balance, and keep you in better physical and mental condition. It is not selfish and should not be looked at as a reward, but a necessity. ⁣

Mine is taking a hot bathe and journal in the morning. When the weather is warm I enjoy sitting outside with a cup of coffee while journaling and reading. Plus taking time to rest and relax with a good book in the evenings.⁣

That says it all. Those before pictures are so hard to look at, but I have to share them. I have to show people that there is HOPE. There is healing. There is a way back to being YOU! For those of you new to my page, just seeing my journey I didnt always look like this. I could go on and on for dayyyyyyyys about the physical transformation that you can clearly see. The first pics were December 10, 2018. The second was today. April 15, 2019. Now my body has shrunk drastically... but my mind. My inner thoughts. My self image. Those have changed even more.. I am no longer a prisoner of that monster on the left. I am no longer unhappy with who I am and I am back to living the life I have always longed for but never thought possible. 
44 pounds gone so far and I'm not stopping there 💃

I am sleeping through the night

I am running around the park with my kids again

And you wanna hear the best part?? I haven't had a drink in almost 4 months 🙌 this is huge considering I would have a bottle or 2 of cabernet before bed. Or vodka for lunch, even. All to numb the pain of me being me and me being someone I hated to be around but I was stuck in that body. I'd always make jokes about being the fat girl before anyone else could make a comment... seemed to work. Seemed to make people laugh. Then I shifted the joke into me always being the mom with a glass of wine. "This is mom juice" "y'all are making me drink!" But really. Nothing was funny. I was slowly killing myself. I never just drank a glass of wine. I had no limit and I had no shame.

Now here I am and I CHOOSE JOY and I choose ME every single day. This program has SAVED MY LIFE. What are you waiting for? Why are you still sitting on the sidelines of your own life and watching it pass you by? Get up. Take back your life. It is never too late and you are ALWAYS worth it. Make a change. Prove you wrong. I know I sure did. I had to. And I will never ever let ME stand in the way of anything I want ever again."

I’ll be honest, I wasn’t sure how happy today was going to be! I doubted for a moment if we could do this. 😬

We were up too early then slept too late. Lila hasn’t been to church since September and Jj has never spent the day in the nursery. 🀊🏌‍♀

So many ways things could just go sideways and I’m still learning how to shut that “negative scenario generator” down. 🙅🏌‍♀
.
30 minutes later we left with intentional hope for a good day. And we were not disappointed!
.
Lila didn’t even acknowledge that she was leaving me in her dust scooting off to play. Jj stood cautiously when we left him in the nursery. Both playing totally content when we picked them up. 💕

Now we’re enjoying some sunshine; they even let me snap some cute pictures. ☀ 📞 .

Happy Easter from our little munchkins. . I’ll be honest, I wasn’t sure how happy today was going to be! I doubted for a moment if we could do this. 😬 . We were up too early then slept too late. Lila hasn’t been to church since September and Jj has never spent the day in the nursery. 🀊🏌‍♀ . So many ways things could just go sideways and I’m still learning how to shut that “negative scenario generator” down. 🏌‍♀ . 30 minutes later we left with intentional hope for a good day. And we were not disappointed! . Lila didn’t even acknowledge that she was leaving me in her dust scooting off to play. Jj stood cautiously when we left him in the nursery. Both playing totally content when we picked them up. . Now we’re enjoying some sunshine; they even let me snap some cute pictures.  📞 . Catching one might be possible but exhausting for you and probably pretty stressful for the butterfly. Attracting one made me feel joyful! Not sure what I had on my jacket to make that little fella land and not wanting to leave but I take it as a fun moment on an otherwise chilly and noisy city trip.
