Leftover Makeover Friday post. 
Making salads out of leftovers is another way to use leftovers. In today’s recipe I added tomatoes, lettuce, Sazón, apple cider vinegar, olive oil & salt to leftover rice & beans. 
As for broiled peppers I used the tops for decorations and the rest of peppers I blended them in blender with 1 tsp balsamic vinegar, 1.5 Tbsp water and salt to taste in order make a tasty sauce to use over baked potatoes & butternut squash. .

Turmeric Tahini Frosting 🦋
1/4 cup raw tahini, unsalted
3 tablespoons coconut nectar
2 tablespoons water
1 teaspoon turmeric paste (recipe below)

🦋Blend all in a high speed blender such as the Vitamix. Top on each muffin or cupcake! Frosting should be thick and easy to slather on top. ✨✨Recipe is for tahini lovers!!

1/2 teaspoon ginger spice

🦋Heat water with turmeric in a saucepan over medium-low heat.
Whisk and simmer into a paste, add coconut and ginger and whisk. Store in an airtight container in the fridge for several months.

SHRIMP with Garlic Tahini Broccoli @shredhappens .

If you haven’t tried broccoli slaw you’re missing out!. I dressed it up with a nutrient-dense dressing I made with a handful of cilantro, garlic, spinach, tahini, and lemon. As always, feel free to experiment and substitute out any of the ingredients to suit your tastebuds. You can use this dressing with salads, with noodles, or use as a dip for vegetables. Tahini has such a nice kick and at 0 net carbs, it’s a great alternative to using oil for dressings.

To make a large batch of the dressing/pesto:
.
1.In a small food processor, I threw in 1 handful of fresh cilantro, 1 cup of baby spinach, 2 cloves fresh garlic, 1 tablespoon olive oil, 1/4 onion, juice of 1.5 lemons.
.
2.Pulsed all of the above together, then added 2 tablespoons of tahini.
.
3.Pulse and pureed everything above and added sea salt, pepper, and a little ginger, then ran the food processor again.
.
4.At this point, I did a quick taste of the sauce to see if I wanted to season with more salt, add more lemon juice, or add more herbs. This all depends on your taste buds. I mixed some of it with the slaw and put the rest in the fridge.
.
To make the shrimp:
.
1.I seasoned a handful of large shrimp with sea salt, some lemon pepper, smoked paprika, and some red chili flakes.
.
2.I put the shrimp and sliced mushrooms in a pan on medium heat with 1 tablespoon coconut oil and cooked on each side until pink (less than 5 mins total).

La gente que come mucha grasa/condimentos le hace el feo a la comida natural muchas veces, es entendible y cosa de acostumbrarse, en lo personal para mi fue rápido acostumbrarme por la mentalidad y disposición que tenía pero hay personas a las que les cuesta más y está bien, consumiendo natural empezando con pequeñas porciones y ver que tipo de platillos nos gustan para irlos metiendo en nuestra forma de comer diaria. Poco a poco se puede tener una mejor salud con pequeños cambios, siempre pensando que es para nuestro propio bien y disfrutar el proceso 🏄🏻‍♀️ se los dice la morra que llegó a comer 30 alitas en una sentada jajajaja, todo es posible ⭐️

We touched on everything from loneliness as a single woman in a big city to how gut health is linked to mental health and poop 💩

It’s amazing to me that there is still some fear when it comes to these sort of discussions. It shouldn’t be taboo to talk about bowel movements, tampons, burping and farting. Yes, women do these things too and should feel comfortable talking about it!

So I made this granola this week and I am in with love it😁. It’s made with a buckwheat base, buckwheat (if your wondering) is a healthy carbohydrate, thats high in magnesium and fiber, it isn’t related to the  wheat family (it’s gluten free🙌🏻), it’s great for building muscle, and it’s actually an antioxidant, that is great for the immune system💛 #healthycarbohydrates .

[ad] ***Scroll down for the recipe!*** 🐣 Swipe left to see what my little sous chef and I baked today with a little help of @tateandlylesugars 🐣 This year we are celebrating our first Easter as a family of three and as a new mum I have limited amount of time left for baking 😅 So for this Easter I wanted a cake that is light, easy to make, but still delicious and festive looking! This Lemon&Almond sheet cake with Vanilla whipped cream is just what I had in mind and I really like how it turned out, do you? The Tate & Lyle golden caster sugar that I used in this recipe is giving that delicate flavour of honey and it’s perfect for baking all kind of sponges 🙌 
RECIPE

For cake:

140g cake flour
120g golden caster sugar
100g butter
50g almond flour
2eggs
3tbsp greek yoghurt or sour cream 
Pinch salt
1/2tsp vanilla paste
1tsp baking powder
1tbsp lemon juice
Zest of 2 lemons + more for serving

For Whipped cream:

200ml double cream
1/2tsp vanilla paste
(Mascarpone would work great here too, mixed with cream!) Method
	1. Butter and flour the cake pan and parchment paper (baking tin I used for this recipe is 22cm) Combine the flour, almond flour, baking powder and salt together in a bowl. Set aside.
	2. In the bowl mix the butter and sugar together until fluffy. Add in the eggs, one at a time, combining well. Add in the vanilla and zest. Slowly, add in the dry ingredients. Blend until just combined.
	3. Finally, fold in the greek yoghurt with a spatula and pour the batter into the pan.
	4. Bake at 170oC for 25-30 minutes. When baked let it cool down.

Vanilla Whipped Cream: 
Pour the whipping cream into the bowl, add in vanilla paste and beat to combine. Do not over beat. Spread all over the sponge and decorate with more lemon zest and mini Easter eggs 🐣 Happy baking everyone x #TateAndLyleSugars #JoyOfBaking

{Asparagus is in season right now! Not only is this vegetable a TOTAL POWERHOUSE for nutrition, it's very versatile and beautiful to add to all of your Spring & Summer meals!
This skillet is one of my all time favorite Springtime meals.

Asparagus contains anti-inflammatory and antioxidant nutrients help to reduce chronic health problems including type 2 diabetes, heart disease and cancer.
Asparagus also contains good amounts of inulin, which becomes a food source for good and healthy gut bacteria. Good bacteria in our digestive tract will help with better nutrient absorption, a lower risk of allergies, and lower risk of colon cancer.} .

makes 4 servings

Ingredients: 
4 large chicken breasts 
1 Tbsp avocado oil, or olive oil 
1 Tbsp fresh lemon zest (optional, but amazing!)
sea salt and fresh ground pepper, to your taste 
12 small asparagus stalks, ends trimmed 
4 small slices high-quality mozzarella cheese 
4 Tbsps sun-dried tomatoes, chopped 
1 tsp garlic salt

Instructions: 
Preheat the oven to 375 degrees f. 
Cut the chicken breast in half, length-wise, but just enough to make a pocket, as shown. 
Rub the inside of the chicken breast with lemon zest, sea salt and pepper. 
Place chicken on a cutting board and stuff each equally with the mozzarella, asparagus and sun dried tomato, then fold over. Insert a large toothpick to close the pocket. 
Rub the chicken with a pinch of garlic salt and pepper. 
Heat oil in a large and oven safe skillet over medium-high heat. 
Sear the chicken for 3 minutes per side then place the skillet in the oven. 
Bake in your preheated 375 degree oven for about 15-20 minutes, or until cooked through and no longer pink in the inside.

Ostern steht vor der Tür und es ist nochmal (Karotten)-Kuchen-Zeit! Und weil ich schon lange mal wieder ein Bananenbrot backen wollte, aber irgendwie auch einen Karottenkuchen, habe ich beides einfach zusammengepackt. Herausgekommen ist ein super leckerer, saftiger, Kuchen. Er schmeckt natürlich auch super mit Erdnussbutter oder Marmelade oder was auch immer Süßes ihr noch drauf machen möchtet. Ich habe den Zuckergehalt wegen FODMAP reduziert, aber ihr könnt auch bis zu 150 g Zucker in den Teig geben. 🍌🥕

Die Zubereitung ist super einfach, denn ihr könnt alles in einer Schüssel vermengen.
Den Ofen auf 200°C Umluft vorheizen

3 Bananen zerdrücken
200 g Möhren raspeln
100 g dunkle Schokolade in kleine Stücke schneiden (ich habe wieder die 75% mit Kakaosplitter von Sarotti genommen)IWerbung da MarkennennungIunbezahlt da selbst gekauftI
10 Haselnüsse klein hacken
100 g brauner Rohrohrzucker
1 Päckchen Vanillezucker
125 g Magerquark, laktosefrei
2 Eier
7 g Backpulver
200 g Dinkelmehl

If you're looking for a creamy vegan soup that is loaded  with flavor, then this  broccoli soup is healthy and easy to make!

All you need are 
1 pound broccoli
1 small potato
2 garlic cloves
1 snall chopped onion
2 tbsp olive oil
Salt, pepper, cumin for seasoning
Vegetable broth or water

Method 
Heat the olive oil in a large pot over medium heat. .

Once the oil begins to shimmer, add the onion and cook for 3-4 minutes, until semi-translucent. .

Add the garlic and salt,  and cook for 2-3 minutes more, until the garlic is fragrant.

Add the  potatoes, broccoli, vegetable broth or water  and bring to a boil. .

Cover and reduce the heat to low. .

Simmer for 20 minutes, or until the broccoli is tender.

Home made whole wheat sesame thins 
البرازق الفلسطيني / قراقيش بالسمسم 
Ingredients
3 cups whole wheat flour
1 cup evoo
4 tbsp sesame seeds for the dough and more for spreading.
4 tbsp black sesame seeds
2 tbsp black seed
1 tbsp ground anise
1 tbsp ground fenel
1 tsp ground mahleb
4 tbsp honey or any sweetner
1 tsp bakers yeast
About one cup or more whey or water for kneeding

Instructions
- Preheat the oven to 400F. Line a large baking sheet with parchment paper.
- Mix all dry ingredients and rub the olive oil into them.
- Add whey or water and knead. - Let the dough rest for about 15 min. - Form small balls and set on a greased surface.
- Evenly spread each ball between two parchment  papers sprinkled with sesame seeds until it is between ⅛-inch to ¼-inch thick
- Transfer onto the prepared baking sheet and bake at 400F until golden at edges and set at center. - Broil just until the surface is golden - Transfer  to wire rack and cool completely . Store in an airtight container
