When life gives you hundred reasons to cry show that you hav chicken to make you smile😛😛😎.
So my Dinner delight yesterday night was dis HONEY CHILLY GARLIC CHICKEN🍗🍗...n I love cooking it as well as relishing it.
The aromas while cooking it are so awesome and intoxicating 😍😍 dat can't wait to devour it😋😋.
And again not to forget it's a HEALTHY  option I cook as it's prepared with minimum oil n pan fried not deep fried.
I love premarination so had marinated the chicken a day before so that the flavors seep through and they certainly did😍😋😋.
It was a way to celebrate my sister's bday as I always used to cook for her on her bday🎂.

We had family this weekend so that always means grilling some steak for tacos with all the sides! I totally had a rice and bean dish fail. Happy Easter everyone! 🐰Tonight I made Haystacks for the family and they were amazing, as usual. *

If you’re unfamiliar with haystacks, like I was before I met my husband, they’re like vegan nachos with this amazing cashew cheese sauce. It’s a really great family meal, and it’s fun, because everyone gets to build their own. I could seriously eat this daily!! They are so YUM! *
I made some easy, no soak, instant pot pinto beans for this meal as well. I’ll be adding that recipe to my website very soon. If you want the cashew cheese recipe, you can find that right now on my website (listed in bio). *

It’s Guacadilla night! I use guacamole in place of cheese that’s in a typical quesadilla. Oh, so good 🤤 For the filling, we’ve tried it with various veggies (good with zucchini), and portobello mushrooms, but tonight we kept it simple: black beans, red bell pepper, red onion, tomato, and cilantro.
I spiced/cooked black beans, and marinated/cooked the veggies. The following is enough for two people, so make adjustments for your circumstance. Warning, this is spicy!

Ingredients for the marinade (mix it all in a bowl): Juice from half a lime 
1 tbs olive oil 
1/2 tsp cumin 
1/2 tsp chili powder 
1/4 tsp sea salt 
1/4 tsp black pepper 
1 tbs garlic powder 
1/4 tsp jalapeño powder 
1/2 tsp paprika 
1 tbs maple syrup 
2 tbs nutritional yeast 
2 tbs water

Other ingredients: 
1 large avocado 
1/2 to 3/4 cup dried black beans 
1 small/medium tomato 
1/3 to 1/2 cup chopped red onion 
1 red bell pepper 
1 cup fresh cilantro 
Spices for the black beans (whatever tickles your fancy, but some good ones are sea salt, garlic powder, and onion powder). Cook your beans until soft. Chop up the bell pepper, onion, tomato and any other veggie you want, mix them into the marinade until completely coated, set aside, let them marinate for 30 min at room temp. After they’ve marinated cook them on low/medium heat until heated through. Mash up your avocado add a pinch of salt/make guacamole. Warm your tortilla, then spread a layer of the guacamole on it, spoon some cooked beans on top, then poor the veggie mix over that, then top it with fresh cilantro. For a small guacadilla just put the fixings on one half and fold the tortilla over it, or go for the gusto with a large guacadilla and sandwich the fixings between two tortillas! Ingredients:

4 cups seedless watermelon, roughly chopped, reserve half

1 celery stalk
1 garlic clove
1/2 small chili pepper, deseeded and roughly chopped

>Cubres la parte superior del chile con la panela.

omg i has the best veggie burger the other night! just made with navy beans, zucchini, and whole wheat bread crumbs 😍 served with a side of thin cut baked fries and buffalo cauliflower wings whiCH WERE BOMB AF! you need to make bbq cauliflower. it’s addictive. even my picky little sister liked them 🤩 veggies burgers are the best kind of burger bc they taste great and don’t harm anyone ☺️

The weather today could not have been any more beautiful. Annnnnnd, we were lucky enough to enjoy it on a weekend! I can’t remember the last time that happened, can you? We spent most of the day outside playing, and my hubs even did the cooking outside on the grill tonight. If you’re into the @beyondmeat burgers (or really any burgers), you need to try this combo! The burger has roasted garlic spread on top and is covered with onions that were sautéed with a little avocado oil and vegan bbq sauce, and then it’s topped with @minimalistbaker coconut bacon. Thennn, you eat it with the grilled pineapple! 😳😋🤤 It’s seriously amaaaazing. On the side we had grilled asparagus and kabobs with zucchini, summer squash, portobello mushrooms, onion, poblano peppers, bell peppers and pears. When it comes to avo toast, we don’t play games!!! It’s all in or nothing on the saturation and taste bud levels. We like to top our avo toast with hemp seeds, drizzled siracha and sea salt. This gives the toast the perfect amount of crunch, spice and saltiness!!! You can always leave off the dash of salt to lessen the sodium content😋 
AVO MIX: 1 whole avo mashed and kept chunky, some garlic powder, little salt and pepper, 1/2 tsp lemon, little bit of siracha. Mash all this together and add to your TOASTED toast. That is the key with avo toast, you HAVE TO HAVE TOASTED TOAST! The more crunch the BETTER. Enjoy🥑🍞🍋
