Steamer clams with tomatoes, broth, shiitakes, scallions, serrano chili, bacon, and daikon radish zoodles (I bought them at Whole Foods already spiraled)! Add about 2lbs of steamer clams to a bowl. Add water just enough to cover clams. Set aside.
Dice 3 pieces of bacon and add to a heavy-bottomed pot or Dutch oven. Cook bacon until fat is rendered and bacon is crisp. Set bacon aside on a paper towel.
Add the whites of 5-6 scallions, a cup or so of sliced shiitakes, and a diced serrano (discard seeds if you don't want the extra heat). Stir-fry the veggies, scraping the brown bits from the bottom of the pot, until scallions are tender.
Add spiraled daikon radish (the radish really holds up in the broth). Stir. Add a cup of veggie stock and a can of diced tomatoes, including juice. Season with salt and pepper. Bring to a boil.
Drain clams and give them another good rinse. Add them to your pot. Cover and let cook for 5-8 minutes until they open. Remove from heat. NOTE: Discard any clams that don't open as they are bad.
Transfer to bowls. Garnish with scallion greens and bacon. And then dine and go to heaven, because this was so tasty!! I picked up the cute bowl at Target from the @chrissyteigen collection! - 1 hour ago
