Rice Made with Fried Onion
So this brown colored rice is typically eaten with seafood in Egypt and it’s so simple to make . If you’re serving about 3 people you’ll need
1 cup of white rice, 1 medium onion, 2 tablespoons of corn oil, 1/2 teaspoon of salt, 1 1/4 cup of water.
The first step you’ll take is rinse your rice with cool water about 3 times until the water starts to become clear and not starchy, put aside. Take your onion and cut it up very fine, if it’s easier you can put it in a food processor but make sure it doesn’t become to watery because you still want small onion pieces. Slide next to see how my onion looks once cooked. Once your onion is diced add your oil to a pot and when the oil begins to get hot, add your diced onion pieces. No need to rush with the onion at all because the goal here is to really burn the onion up, so get it dark. That is how you will get that brown color in your rice and really good flavor Again, swipe to see the color of the onion that you’re aiming to get when cooking it in the oil. Once you get your onion to that dark brown almost black color add your water and salt 🧂let the water boil with the onion for a minute and then drop your rice right in. Heat should be on medium/high. Let the rice boil for about 2 mins and make sure you mix every now and than until the water has absorbed a bit but not entirely there should be some water in the pot but compared to when you first added the water it will be less and you should be able to see the rice a little clearer since some of the water is now absorbed. When your at that stage mix one lash time, turn your heat on the lowest so that the rice doesn’t burn and cover your rice with lid. Let rice cook for about 10 mins ⏱ then uncover and mix. Cover one last time and cook for another 5 to 10 mins depending on the consistency you like.
