Tuna around and let me see that... 🐟

Amplifying nutrition in a meal... it can really be this simple.

Today, I craved a basic tuna sandwich. I added arugula, and paired it with veggies and a few tortilla chips. 
Wait Abril! I thought Tuna was processed and full of mercury?! Yes and yes,  but Tuna is still a better option than many convenience foods out there for various reasons...
▫️You can now find Wild Caught Tuna.
▫️As long as you are not consuming Tuna daily and you are aware of your current toxic load, you are safe eating tuna a few times a month.
▫️Tuna is inexpensive.
▫️It is easy to prepare and travels well.
▫️It is protein rich.

What do you get when you combine matcha, avocado, coconut + a bit of chocolate too?! 🍵🍫 A MOOD-BOOSTING MAGICAL POPSICLE that will keep your mind happy + body energized all weekend long! 💁‍♀️
TO MAKE:
1 can full fat coconut milk
1 medium avocado
1/4 cup additional coconut milk or nut milk of choice
1 teaspoon vanilla
1 tablespoon matcha
1/2 cup medjool dates, pitted
pinch of sea salt
1 high quality dark chocolate bar
METHOD: Combine all ingredients in a blender (except the chocolate) until smooth. Pour into popsicle molds and freeze for at least 4 hours or overnight. Once frozen, melt chocolate and dip the tip of each popsicle into the melted mixture. It will freeze immediately. Drizzle additional chocolate and dust with a touch of matcha for more magic. Eat immediately for instant happiness! 🤸‍♀️🕺💃 #matchapopsicles #moodboosting #kaleandchocolate

It may not be officially summer, but I’m gonna go ahead and say it is because it’s already been up in the 90s here in tn 😯 I love when it’s finally warm enough to hangout outside and make yummy dinners on the grill. I've been seriously loving on the wheat berries this week. If you haven't tried them before I highly recommend- a great item to keep in your pantry! 
1. Super easy to cook just soak for a bit and then throw them in some water (I add vinegar)
2.Packed with fiber, iron and protein because there is little processing involved and most of the grain is kept 
3. I love the texture, chewy and delicious 
4. Affordable! I buy these little guys in the bulk section and they go far!!
5. Long lasting, toss them in a sealed jar and keep them in your pantry for breakfast,lunch or dinner 
6. Versatile, I eat them in salads, as breakfast cereal warm/cold, as a base for soups and stews

For this recipe I roasted up some brussel sprouts, julienned carrots, chopped radish, threw in some arugula, chopped radish, currants and tossed with a simple vinaigrette! Add these to your shopping list you won’t be disappointed!

This week also featured some pesto + zoodles, a white bean and shiitake mushroom stew on a bed of cauliflower and some local Halibut as it’s in season and delicious! I also sauteed up a bit of fresh Sage with garlic and olive oil because why not??

When I say comfort food, what comes to mind for you?

Toss out the ideas of good/bad foods, I really want to know what the first thing that comes to mind is.

For me, some of the first things that comes to mind is burritos, tacos, hot fudgy brownies, ice cream, blueberries, tea, a bowl of creamy soup, grilled cheese sandwiches, nachos... Ok, I love food! 😋
.
Here's the thing... You can make any food "healthy"... You can make brownies using black beans or protein powder... You can make burrito bowls with tons of veg... You can even make ice cream out of bananas, coconut milk and other fruit...
.
What if you chose to enjoy the foods you love in reasonable amounts instead of feeling guilty about wanting to have foods that you or someone else has labelled as "bad".
.
One of the things that I've been exploring lately is removing the labels that I've associated with food and checking in with myself to see how it's nourishing me instead.
.
I've started to ask myself, how I feel when I'm eating, checking in with myself about an hour or so after eating and checking in again about 3 hours after eating.
.
I look at what my state of mind was when I sat down to eat, how I felt after and how my digestion and energy levels feel as well.
.
I've learned a lot about my digestion and my state of mind around food through this process.  I've also been able to do a lot of work around reframing how I view food and if I truly want what I'm eating.
.
I love that I'm starting to tap into my natural rhythms around eating to truly nourish myself and to feel the best I can.
.
I'd love to hear your thoughts on this and what you're working on when it comes to nourishing yourself!

Today’s lunch is brought to you by the lunch spread we had at work..... I made buffalo ranch chicken dip which was AMAZING, grabbed some veggies and spinach dip which I did not end up eating after all.  I found out earlier in the week that the dept was ordering wings and knew they would be off limits to me so I came prepared with my own wings. Being prepared IS KEY. Plus per previous spreads I know cakes and cookies are ALWAYS around so again I prepared myself some keto friendly chocolate chocolate chip cupcakes last night. Думала, что буду радоваться Последнему звонку как ребёнок, настолько этот 11 класс всех замучил🙈, но нет... на смену одним чувствам пришли другие: дети выросли и скоро улетят из своих уютных гнёзд на учебу в большие города 😭😭😭... и будем мы вспоминать как было хорошо и спокойно, когда дети ходили в школу и мы могли кажлый день их обнять и поцеловать 😭😭😭
Пошла к своей... обнимать и целовать, пока она ещё рядом со мной ❤️

A fitness post whaaaaaat?!!?! During my final week of studying and the 6 miserable days I had to wait to get my results, fitness and macros were the LEAST OF MY WORRIES. And that’s fine. I worked out as often as possible, and loosely tracked/ ate intuitively. And guess what? I’m fine and well and it basically changed nothing!! Listen to your body, and know that fitness doesn’t have to be complicated, and the rest of your life can continue and be a priority!!💓💓 Aso these leggings were $14 at TJ Maxx and I don’t ever want to take them off.

Lunch today was this delicious little dip made with Peas and Cannellini  Beans , blended with a little lemon juice, garlic , olive oil, fresh mint and seasoning 😋 served with warmed bread and a big green salad.... a great little dish for picnics too if you’re planning one over the half term holiday !
