DAY 1: DELICIOUSLY ELLA
I am cheating and including all DE books as I can’t possibly only choose one. Where to start with the extraordinarily talented Ella Mills, her husband, Matt and their team (their beautiful dog, Austen and baby Mills on the way!)? 5 cookbooks (and another one on the way - I am counting down), a Deli (you must go it is wonderful), a range of breakfast pots, snacks, frozen meals (a ‘freezer favourites’) and mueslis, a recently launched an app and one of the best podcasts out (I love tuning into my ‘Tuesday Treat’ - I promise it will brighten your day).
Back to the books...I cook from DE a lot. I sometimes substitute the tofu for fish or a poached egg, but her vast collection of plant-based stews, soups, salads and sweet treats are packed with veggies to reach (at least) your five-a-day and full of flavour (and can be reinvented as leftovers with pasta, grains etc) and are perfect to make ahead for the week. There are so many brilliant breakfasts; a porridge for every mood and season, toast toppings that never get dull (from homemade chocolate spread and strawberries to smashed avocado, tomato and kimchi) and simple, satisfying savoury options. For something sweet...the carrot cake and fudgy brownies are AMAZING and the zesty lemon cake is so refreshing.
I love DE because they REALLY care. Their ethos is so inspiring - I wish there were more people who approached the world in such an open, giving manner (I love the personal pages in the book which describe Ella’s journey). The recipes are not there to ‘build a brand’ or make money - but to ‘make vegetables cool’ and revolutionise the once ‘bland and boring’ plant-based food. I would definitely recommend following on social media and signing up to their newsletter as they provide a constant source of food, daily motivation and inspiring insights that will help transform your mindset into a positive place.
