🍫🍊🍫BUDÍN DE CHOCONARANJA 🍫🍊🍫
▶️▶️▶️ Ingredientes: ✔️ 1 taza de harina integral de trigo ✔️ 1/4 taza de harina de avena (o más integral) ✔️ 2 cditas de polvo para hornear ✔️ 2 cdas de #cacaoamargo en polvo ✔️ 3 huevos ✔️ 1 gotita de aceite esencial de #naranja @doterra (o 1 cda de ralladura de naranja) ✔️ 1/2 taza de zumo de naranja #zumo100 @deliziabolivia ✔️ 1/4 taza de aceite de coco (o de girasol) ✔️ 1 cda de extracto de vainilla ✔️ Endulzante a gusto (prueba tu mezcla !) ✔️ pizca de sal (realza sabores) 👌🏻
▶️▶️▶️Preparación 🌡️Horno precalentado 200° C
🔸Batir el endulzante, aceite de coco, zumo de naranja y la gota de aceite esencial (o ralladura) por unos minutos🔸Separar las claras de las yemas y añadir estas últimas junto al extracto de vainilla, Batir BIEN. 🔸Aparte batir las claras a punto nieve con la pizca de sal y Reservar ☝🏻🔸 Agregar los secos a la primera mezcla: harinas (integral + avena), cacao en polvo y polvo para hornear e integrar 🔸 Finalmente añadir las claras batidas con movimientos ENVOLVENTES y Listo ‼️🎉

Happy Day ☝🏻 of the #tiusummerseries everyone! ☀️ I always love this time of year for #toneitup and I’m definitely looking forward to all of the new workouts 💪🏻 I’ll be heading to France on Friday, but will be keeping up with my normal nutrition (other than my birthday on Wednesday) and workouts until then!

FUDGY. GLUTEN FREE. SWEET POTATO BROWNIES 🤩👏🏼

I’ve seen a ton of sweet potato brownie recipes lately and they’ve all looked amazing so I wanted to try making my own recipe and it did notttt disappoint!! These were so fluffy and delicious and you would literally have NO idea that the base of these brownies was mashed sweet potato! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
All you need is —> • 1 egg 🍳 and 1 yolk • 3/4 cup mashed sweet potato (I popped one in the microwave wrapped with a damp paper towel for 8 minutes, then peeled) • 1/4 cup tahini or nut butter (I used tahini) • 1 heaping tbs coconut flour • 1/3 cup pure maple syrup • 1/3 cup cacao powder • 1 tsp vanilla extract • 1/2 tsp baking soda • 1/8 tsp sea salt • 1/3 cup melted chocolate (I used half 100% cacao chocolate and half dark chocolate chunks) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Recipe —> • mix the wet ingredients thoroughly and the dry in a separate bowl • slowly add dry to wet mixing it all in a little at a time until thoroughly combined • OPTIONAL: add chocolate chips for some triple choco action 🙌🏼 • pour into a parchment paper-lined baking dish and smooth out • cook at 350* for 22-24 minutes • let cool for at least 15-20 minutes, then put it in the fridge until it’s fully cooled and enjoy w/ almond milk and whatever toppings ya liiike 🥳

Semi-healthy lemon cheesecake 
I haven’t posted any food in a hot minute so here’s a recipe I made for Easter and because your girl loves some cheesecake🤤

Preheat over to 350 F
1 cup cookie crumbles (I used sugar-free shortbread cookies)
2 TBS butter
2 8oz packages of fat free cream cheese
1/2c sugar
1 tsp lemon zest
1/4c lemon juice 
1/2 tsp vanilla
2 eggs
Spray a 8x8 pan with cooking spray. Mix cookie crumbles with melted butter and press onto pan. Beat the cream cheese, then beat in sugar, lemon zest, lemon juice and vanilla. Then beat in each egg one at a time til combined. Pour over crust and smooth the batter evenly. Pop in the over for about 30-40 minutes or until center is set. Cool on counter for 1 hour and then in the fridge for 2-3 hours.

Tag a friend who would love these Raspberry chocolate covered coconut bars 🍇🍫🥥 They taste like raspberry jam and chocolate, and literally melt in your mouth! I've been pretty obsessed with raspberries lately, I'm almost on the verge of claiming they're my favorite berry!

Coconut layer
- 3 cups of unsweetened shredded coconut
- 1/2 cup of raspberries
- 3 tbs of coconut oil, melted @botanicahealth
- 2 tbs of maple syrup
- 1 tsp of pitaya powder @rawnice

Chocolate layer
- 1 cup of chocolate chips @enjoylifefoods
- 1 tsp of coconut oil

Method: put all coconut layer ingredients into a food processor and mix well. Line a glass dish with parchment paper and spread out evenly. Set in the freezer for 25 mins. For the top layer, use the double boiler method and melt the chocolate chips and coconut oil, whisk well to incorporate. Remove the coconut mixture from the freezer, cut into squares and spoon the melted chocolate over top the bars. Set in the fridge or freeze. Enjoy🌱

As if there aren't already enough pressure on how I should feel about myself, I worry about what the world says about me.... Or think about me.

I'm holding my soft squishy belly thinking "how much harder do I need to work at this?".... And you know what I already work hard enough. I already give it my all.

This morning while I was feeling my lowest from struggling mentally and in this space I was told "gosh you're beautiful" by a complete random stranger.

I instantly remember my words from last week; knowledge a compliment. I blushed and said "thank you so kindly" with a smile.

Proteins, greens and healthy fats are my jam today. .
I ate/drank so many wonderful things over the weekend, loved every minute of it and zero regrets today (ok maybe 1 regret but we won’t go there). It felt good jumping back on track today with no problem.  I also immediately threw my leftovers in the freezer this morning cause I may think I have self control and accidentally slip!  We don’t want a #snaccident 😖

1 egg (might need 2 eggs if it’s a big pack of tenders)
3/4 cup almond flour (might need more if it’s a big pack of tenders)
Cooking spray 
Instructions:
Preheat oven to 400
Spray pan
Take tenders out of pack
Crack egg(s) into one bowl 
Pour almond flour into separate bowl
Dip tender into egg and then dip the tender into almond flour
Make sure the tender is coated well
Place tender on pan
Bake for 35 or so mins 
Make sure you keep the tenders are in long enough for exterior to get browned and “fried”

First - happy earth day! Second - Just wanted to share this because I don’t feel like there could be a better time than following a holiday weekend; no matter what you ate this weekend, you’re still allowed to eat whatever the hell you want this week. Okay, done. 🙃 I was having a convo with a friend this weekend about how we naturally tend to say things like “well I’ll get back on my diet Monday” or “It’s okay, I’ll workout extra this week”. We don’t have to justify food. It only leads to more restriction, which spirals us into developing unhealthy relationships with food. DUH. But just for those who need a little reminder ;) If you did over indulge, YOURE FINE. Your body will naturally bounce back. Drink water. Eat some colorful fruits & veg. Don’t skip on healthy fats & proteins. You’re good sis! 💕

While we’re talking about protein.. as much as I love making decadent treats, I also like easy recipes that take zero time & brain power but taste awesome. I was SO excited about these because they were so dang good & take like five whole minutes. You’re welcome ;)

✨Churro Protein Waffles w/ salted caramel dip✨
1/2 tbsp flax + 1 scoop protein (I used @macr0mike snickerdoodle) + 1/4 cup buckwheat flour or almond flour + 1/2 tsp baking powder + 1 tsp cinnamon + 1 egg (or flax egg for vegan) + 1 tsp vanilla (optional!)
Mix all ingredients together & pour into waffle maker. Once cooked, I sprayed a little avocado oil spray on them & dipped them in a mixture of 1 tbsp coconut sugar & 1 tsp cinnamon. For the “caramel” dip: mix 1 tbsp almond or cashew butter + 1 tbsp @lakantosweetener low carb maple syrup (link in my bio for a discount!) + pinch of salt + 1/2 tsp melted coconut oil to thin. Dip away! 💕

It rained all night last night, so to warm up my belly I have a bowl of nourishing creamy protein oats. I have bumped up the nutritionals with pea protein powder @pulsinhq and hemp hearts @linwoodshealthfood. ⠀
Toppings? whopper strawberries (yes I've been to the Farmers Market again!), fresh and dried goldenberries @naturesheartsuperfoods, kiwi half moons, blood orange full moons with a touch of cinnamon, sweet plump bloobs and crisp pumpkin seeds.⠀
