"My whole family is creative and being raised in this environment pushed me to find what creative outlet made the most sense to me. After trying my hand at cooking at 16 with a catering company I was hooked and needed to do this for the rest of my life. I think you must be excited about what you are doing and for me cooking does that. I need a reason to cook, I need there to be hungry people, I need to have someone to serve because if it’s for myself - I’ll happily eat eggs over rice everyday. I don’t have one supieror goal, since I love all roles of being a restaurant I think my short term goal is to learn all the roles in the back and front of house and help someone open a restaurant . I’ve already knocked out cold side, pastry land, pizza cooker, playing with Chef Stephanie’s wood fire oven, innovative chef for commercial brands, server, maître d, barista, and dishwasher but every restaurant is different every bar is different and I want to learn about it all. I never thought I’d relocate my life to sunny Mexico City to work for a nonprofit and learn about Mexican culture - but here I am. Why am I a chef?
I feel a deep need to respect the ingredients, to cook a steak well, to make a vegetable 6 different ways. I love love love the satisfaction one gets after working a 12 hour shift, yes it’s manual labor but I love it. I sometimes ask myself why do I love cooking so much? There are so many more cons than pros, a personal life is difficult to maintain, you never spend holidays with your families, your body aches from standing and lifting produce, your arms are not your own as they get burned, it’s loud and it’s tough. The reason I get so excited to go to work everyday is because it’s not an office job, it’s a comrodity unlike any I’ve ever seen. It laughs in the face of team work because the people you see 60 hours a week become your family.
