I am so fortunate that I get to work from home just as much as I work away from home. Part of my time is spent navigating my way around Manhattan to teach classes or see private clients all over this amazing city. Part of my time I meet clients at home, or counsel over the phone.
I seriously never tire of my working lunch salad! Even if I worked at an office away from home, I would pack this baby up and take it with me! When my schedule doesn’t allow for a lunch at home, I create something similar out.
It has a basic template, but always a mix + match of a variety of add ins!
Greens on greens + lots of veggies,
Protein source like tuna, salmon, eggs, tofu, beans, feta or goat’s cheese,
Healthy fats like avocado, nuts, seeds, tahini, olive oil,
Alkalizing lemon juice and apple cider vinegar.

Go to dressing apple cider vinegar, white balsamic vinegar, lemon+lime juice, hemp seeds, tahini and pepper. 🍋
Sprinkle with nutritional yeast, toss and chop it all up! #lunch #Yum
