Recipe 👇
1 medium size eggplant, cut into rounds and then halved (make sure the slices are not too thin)
2 tbsp neutral oil
1 tsp ground turmeric
1 tsp coriander powder
2 tsp cayenne (use more of leas to suit your taste - I like it spicy here)
1 can unsweetened coconut milk
1 serrano pepper (optional)
Curry leaves (optional)
1 tsp garam masala
Juice of 1/2 lime 
Salt, to taste .
Instructions: 1. Heat oil in a cast iron skillet, add the eggplant, sprinkle salt
2. Add the ground turmeric, ground coriander, cayenne, 1/4 cup water and stir fry on medium heat until the eggplant slices have wilted and somewhat crisp. I stir fried (stirring occasionally), for 20 minutes. 3. Add serrano pepper and curry leaves, if using. 4. Remove the pan from the heat and stir in the coconut milk, then return to heat (low heat) and simmer for about 4-5 minutes.
5. Sprinkle the garam masala, adjust the seasoning, if needed. 6. Squeeze fresh lime juice just before serving with rice or any flat bread

Taglia una melanzana a fette di mezzo cm di spessore per il senso della larghezza.  Grigliale da entrambi i lati su una piastra.⁠

Taglia l'altra melanzane a dadini di 1cm. In una pentola con un filo d'olio fai rosolare l'aglio. Unisci il timo tritato, le melanzane a dadini, mescola e fai rosolare per qualche minuto. Aggiungi pomodorini in quarti e l'acqua. Aggiusta di sale e pepe e fai cuocere per 10 minuti. Spegni il fuoco.⁠

Spennella le cocottine con l'olio. Poggia sul fondo una detta di melanzana grigliata. Aggiungi un cucchiaio di melanzane a dadini, poi una striscia di prosciutto cotto, ⁠
uno strato di dadini di provolone. Continua con gli strati. Gli ultimi strati dovranno essere di melanzane a dadini e provolone a dadini.⁠

Cuoci in forno statico a 200° per 20 minuti. Sforna e quando saranno tiepidi, capovolgili sui piatti da portata e servi i #tortini di #melanzane!⁠

Stuffed eggplant is one of my all time favourites and this recipe takes it to another level 😋 there’s only 284 calories per stuffed eggplant and over 42g of protein! If you like, you can also add the hollowed out eggplant into the chicken mixture so you don’t lose any of it ☺️⁣

📝INGREDIENTS📝⁣
2 Eggplants⁣
1/2 Onion⁣
3 Cloves Garlic⁣
1/2 Tsp Salt⁣
1 Tsp Pepper⁣
1 Tsp Mixed Herbs⁣
1/2 Tsp Chili Powder⁣
15 Oz Chicken Breast⁣
1 Cup Passata⁣
1 Tsp Parmesan⁣
1 1/2 Tbsp Mozzarella⁣
⁣
👩‍🍳PREPARATION👨‍🍳⁣
1. Preheat the oven to 430F/220C⁣
2. Halve the eggplant and hollow out.⁣
Place on a baking tray and bake for 15 mins.⁣
3. While the eggplant is cooking, fry onion and garlic in a pan until the onion turns translucent.⁣
4. To the pan, add salt, pepper, mixed herbs, and chili powder. Cook for a further couple of mins.⁣
5. Add the chicken breast, and cook until the chicken begins to brown.⁣
6. Pour over the passata, and simmer for 10 mins to reduce the sauce.⁣
7. Fill the cooked eggplant with the chicken mixture, and sprinkle over the cheeses.⁣
8. Bake for a final 5-10 mins ⁣
9. Serve and enjoy 🌱😋⁣

Aglio_ 1 spicchio⁠⠀

PER FRIGGERE⁠⠀
Olio di semi_ q.b.⁠⠀

In una pentola con un filo d'olio fai insaporire l'aglio. Toglilo e versa la passata di pomodoro, regola di sale e pepe, aggiungi basilico spezzettato a mano. Mescola e fai cuocere per 25-30 minuti.⁠⠀

Taglia le #melanzane a cubetti e friggile in olio a 180° finché non saranno dorate. Scolale su carta assorbente.⁠⠀

Cuoci la #pasta in abbondante acqua salata. Scolali poi direttamente nel sugo, mescola e fai cuocere 2 minuti. Aggiungi le melanzane fritte, il caciocavallo a cubetti e mescola bene. Melanzane 800 g⁠
Timo 8 rametti⁠
Rosmarino 4 rametti⁠

Olio extravergine d'oliva 20 g⁠
Sale fino 1 cucchiaino⁠
Pepe nero 1 cucchiaino⁠
PER IL RIPIENO⁠
Bulgur 100 g⁠
Pomodorini datterini 250 g⁠
Cetrioli 50 g⁠
Feta 40 g⁠
Sedano 25 g⁠
Basilico 10 foglie⁠
Olio extravergine d'oliva 10 g⁠
⁠
Spunta le #melanzane e dividile a metà per il lungo, poi incidi la polpa in profondità con la lama di un coltello ⁠
creando una sorta di scacchiera ma avendo cura di non intaccare la buccia. Strofina la superficie delle melanzane ⁠
con lo spicchio d’aglio.⁠
⁠
Condisci con sale, pepe e olio e adagia sopra i rametti di timo e rosmarino. Cuoci le melanzane per 20 minuti in forno statico preriscaldato a 220°C.⁠
⁠
Trascorsi i 20 minuti di cottura delle melanzane, rimuovi ⁠
le erbe aromatiche, copri con la carta stagnola e inforna ⁠
nuovamente per altri 10 minuti.⁠
⁠
Fai cuocere il bulgur in acqua bollente salata per circa 10 minuti.⁠
⁠
Una volta cotte, le melanzane risulteranno molto morbide: rimuovi la polpa con l’aiuto di un cucchiaio e aggiungila ⁠
nella ciotola dove avrai precedentemente tagliato i pomodori, i cetrioli e il sedano. Aggiungi anche le ⁠
foglioline di basilico e il bulgur. Infine condisci con un filo d’olio e mescola bene per amalgamare il tutto.⁠
Riempi le melanzane svotate con il ripieno di #bulgur e verdure, poi aggiungi la feta sbriciolata e una macinata di ⁠
pepe.⁠

Ingredients

Brinjal/Egg plant - 8 nos
Oil - 1/2 cup
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Cumin seeds - 1/2 tsp 
Asafoetida powder - 1/2 tsp
Few Curry leaves 
Shallots - 2 cups (Whole & sliced)
Pounded Garlic
Tomato - 1 no. chopped
Grated Tomato - 1 no.
Turmeric powder - 1/4 tsp
Chili powder - 2 tsp
Coriander powder - 1 tsp 
Salt to taste
Tamarind puree - 1/4 cup
Water
Powdered Jaggery - 1 tsp

For Masala Paste
Turmeric powder - 1/2 tsp
Chili powder - 2 tsp
Coriander powder - 3 tsp 
Salt to taste
Tamarind puree - 3 tsp
Water

Method:
1. Take an even sized brinjals.
2. Cut them in to 4 in the center. Do not cut the crown part.
Masala for brinjal stuffing:
3. Take a bowl add turmeric powder, chili powder, coriander powder, salt, tamarind puree and little water. Mix all the masala together.
4. Stuff the masala paste in to the brinjal.
5. Take a kadai (wide sauce pan) add oil and shallow fry the brinjals. Make sure it got cooked all the sides. After that keep it aside.
6. Use the same oil for tempering.
7. Add mustard seeds, fenugreek seeds, cumin seeds, asafoetida powder, curry leaves, shallots (whole & sliced), pounded garlic, tomato, grated tomato, turmeric powder, chili powder, coriander powder and salt. Saute well.
9. Add thick tamarind puree and little water.
9. Once the curry (kulambu) starts boiling, add the brinjals. Close the lid and let it cook for 10 minutes. Keep the flame on medium low.
10. Add the powdered jaggery to balance the spiciness. Just mix all together
Spicy and tangy ennai kathirikai kulambu is ready to serve with hot rice.

- Картошку и лук трем на крупной тёрке; лук - обязательно!⠀

- Хорошо жмём руками и перемешиваем⠀
- Добавляем муку и снова хорошо мешаем⠀
- Нагреваем масло на сковороде⠀
- Ложкой выкладываем смесь и формируем тонкие драники⠀
- Жарим до румяности⠀
- Перед каждой порцией добавляем ещё немного масла⠀

Ingredients:
1 large eggplant, cut into round slices
2 large tomatoes, finely chopped
2 yellow onions, thinly sliced
1 cup of chickpeas (soak about 1/2 cup of dry chickpeas/garbanzo beans in hot water for about 2 hours or room temperature water, overnight. Then, cook (or pressure cook) the beans until tender
1/4 cup + 2 tbsp olive oil, divided 
6 cloves of garlic, minced
1/2 tbsp tomato paste (unsalted)
Salt, to taste
1 tsp dried mint
1/4 tsp paprika
1/4 cup Chopped parsley, optional

Instructions:
Heat a cast iron or a non-stick skillet (medium heat), add 1/4 cup olive oil and arrange the eggplant slices, sprinkle some salt, paprika and let it brown on one side for about 4-5 minutes. Carefully, flip the eggplant slices with a pair of tongs, let the slices brown and wilt for another 4-5 minutes. Transfer to a plate and set them aside 
Heat a wide pan, add 2 tbsp olive oil, 6 cloves of minced garlic and 2 large sliced yellow onions, sprinkle some salt and sauté for 3-4 minutes. 
Now add 2 large chopped tomatoes, 1/2 tbsp tomato paste, 1 cup cooked chick peas, 1/2 cup water and 1 tsp dried mint. Stir well and cover and let it simmer for 5 minutes.
Remove the cover, add the eggplant slices, gently mix, cover and cook for another 7-10 minutes.
Add parsley before serving. 
Serve with your favorite toasted flat bread.
