Egg Loaf (4 Types)
CORRECT, I have NEVER made an egg loaf before! I see them all over Instagram all the time, and since I’m always trying to be creative I never felt the need. I also feared the calorie density that comes with an egg loaf. ..
I was going to make a partial batch, small loaf with 1/4 the ingredients, but then ideas started turning in my head to reduce calories and change up flavor! I ended up with 4 different loaves, each two servings. ..
Here is what I found:
Loaf 1 - Original Recipe
Ingredients: 2 eggs, 1 Tbsp butter, 1 oz cream cheese, and 1/4 tsp baking powder.
Nutrition: 190 calories, 15.5g fat, 1g carbs, 8g protein
Texture: this was the most stable of the 4 breads and most resembled bread.
Taste: Tasted closest to bread and toasted the best! ..
Loaf 2: Reduced Fat
Ingredients: 2 egg whites, 1 Tbsp light margarine , 1 oz cream cheese, and 1/4 tsp baking powder.
Nutrition: 112 calories, 7g fat, 1g carbs, 7g protein
Texture: Very spongy
Taste: Tastes a LOT like a popover, I almost like it better than the original! ..
Loaf 3: Avocado Loaf
2 eggs, 1 Tbsp butter, 1 oz avocado, and 1/4 tsp baking powder.
Nutrition: 172 calories, 14.9g fat, 1g carb, 6.9g protein.
Texture: Less spongy the light loaves but more than the original recipe.
Taste: It was alright bit nothing special. Needed seasoning I think. ..
Loaf 4: Reduced Fat Avocado
Ingredients: 2 egg whites, 1 Tbsp light margarine, 1 oz avocado, and 1/4 tsp baking powder.
Nutrition: 58 cal, 5.1g fat, 0.6g carbs, 1.2 grams protein
Texture: extremely spongy/flimsy
Taste: same as other avocado loaf, needs seasoning or maybe even just a really good spread on it. ..
Final thoughts: I think the reduced fat was my favorite, but probably because I absolutely love/miss popovers! Unfortunately it isn’t as healthy since it’s margarine. I do like how Avocado reduces calories but it definitely needs some flavor, it tastes quite bland. .
