Pearl couscous salad. Simple and all the colours of the rainbow.
.
You need:
👉🏻 packet pearl couscous. Don’t use the whole packet. Approx 1/4 a packet.
👉🏻 1/2 red onion finely chopped.
👉🏻 half cucumber finely chopped.
👉🏻 half capsicum finely chopped.
👉🏻 handful dried cranberries.
👉🏻 handful pumpkin seeds.
You could add chopped up cherry tomatoes and tinned corn 👌

Now it’s pretty easy to make:
👉🏻 cool the couscous as per packet instructions.
👉🏻 put everything in a bowl. DONE!

I serve warm and add the following salad dressing:
👉🏻 2 tablespoons olive oil.
👉🏻 3-4 tablespoons apple cider vinegar.
👉🏻 2 teaspoons honey.
👉🏻 salt and pepper.
Best thing about this salad is it lasts days in the fridge 👌

Milanesas de soja texturizada 😍👌🏼 Necesitamos:
☆Soja texturizada en filets como para milanesa.
☆Agua(la cantidad que necesites lo mismo la harina,depende cuántos filets tengas).
☆Harina(cualquier tipo).
☆Pan rallado o avena.
☆Condimentos:Use provenzal un poquito de sal, pimienta y condimento para carne.

Procedimiento:
1) Ponemos en remojo con agua tibia los filets de soja unos 10 minutos maso menos y una vez que estén un poco blanditos le pasamos el condimento para carne como si lo estaríamos "salando". No se preocupen si están un poco duros porque se terminan de cocinar en el horno o sartén donde las quieran hacer.
2)Preparamos la mezcla de harina y agua que va servir como si fuera "huevo" para que se pegue el pan rallado(tiene que quedar media espesa así que si te quedó muy líquida agrega harina).Le agregamos provenzal un poco de sal,pimienta y listo. Por otro lado ponemos el pan rallado o avena en una fuente pequeña.
3) Ahora que ya tenemos todo podemos ir preparando las milanesas; agarramos los filets de soja los pasamos por la mezcla y después por el pan rallado y repetimos hasta terminar todas. Las podes hacer fritas o al horno como más te guste 😋

ALOHA everyone! 🌺  so this last Saturday I made this healthy version of banana muffins for the Meditation Workshop students and everybody loved them! So you might too 🥰 They are so easy to make! Vegan (egg free) & Oil Free .
.
Ingredients:
* 4 riped bananas
* 1/2 cup brown (unrefined) sugar * 4 tablespoons of water
* 1 teaspoon natural vainilla extract * 2 cup whole wheat flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt 
Preparation 
1. In a bowl mix: mashed bananas + sugar + water + vainilla
2. In another bowl mix: wheat flour + baking powder + salt
3. Mix both 
4. Grease some cupcakes baking sheets and bake at 350C for 12 min (small) ~ 17 min (medium) ~or 45 min (cake) .

ALOHA! 🌺  Este sábado pasado que tuve el Taller de Meditación hice para mis alumnos esta versión de muffins de banano saludables y les encantó! Así que te podrían gustan a vos también 🥰 son veganos (sin huevo) y no contienen aceite! .

Ingredientes:
* 4 bananos maduros * 1/2 taza de azúcar Moreno o crudo
* 4 cdas de agua
* 1 cdta de extracto natural de vainilla
* 2 tz de harina integral * 1 cdta de polvo de hornear * 1/2 cdta de sal

Preparación 
1. En un bowl mezcle: los bananos hechos en puré (majados) + azúcar + agua + vainilla
2. En otro bowl mezclar: harina + polvo de hornear + sal 
3. Mezclar ambos 
4. Engrase una bandeja para hornear muffins y hornear a 350C: 12 min bandeja pequeña, 20 minutos mediana o 45 minutos bandeja de queque/pastel .

🌈Coriander /cilantro and pork (with vegan option) meatballs - all 6 in our family enjoyed these 🤗

Recipe:
Big bag of coriander/cilantro (has approximately 6 cups worth @countdown_nz 👍or use whatever greens and fresh herbs you like)
1kg (ish) pork mince (or use a combo of cooked legumes and pulses for #vegan) 
1 tsp Himalayan sea salt
1 Tbsp vegetable stock (I used my own low FODMAP version of the Thermomix recipe - if you my have that use your own powdered version or use a combo of herbs and spices that you prefer)
1/2 cup buckwheat flour (for #lowcarb sub 3 Tbsp coconut flour)
Optional extras (which I avoided) would be onion, pepper, eggs - whatever fits your diet.

Method:
Whizz up the coriander and mix it with all the other ingredients.
Form into balls. Bake at 200C for 20-30 minutes (depending on the size of the meatballs.)

Finally tried @gardein fish fillets and they did not disappoint, mainly down to the delicious batter. I tried to make tartar sauce from @hellmannsuk vegan mayo however, and it turned to liquid when I mixed in the other ingredients, not the best! (Love it usually though)

Potatoes Arrabbiata with wholegrain rice (I just added a little turmeric to the water to cook the rice in, to make it yellow)

Ingredients.. 2 hand fulls of baby potatoes with skin on. 
2 garlic cloves sliced 
2 pinches dried chilli flakes
400g passata 
2 hand fulls of baby spinach
Olive oil (or frylight)
Salt & ground pepper corns

Cook the potatoes in a pan on boiling salted water, cook through, then drain. 
Pan fry the garlic in oil until golden brown then add the chilli flakes, passata and cooked potatoes. 
Season generously with salt and pepper and simmer for 10 minutes.

Dinner: Chicken Kabsa + Cucumber Celery Drink

Ingredients (~2 to 3 servings): - 2 chicken legs, cut into 4 to 6 pieces
- 2 cup basmati or jasmine rice washed
- 1 onion large minced, chopped
- 1 thumb ginger, minced
- 1 large carrot, minced
- 1 tbsp coriander powder
- 2 tsp tumeric powder
- 1/2 tsp cumin powder
- 1 tbsp himalayan salt
- 2 bay leaves
- 1 inch cinnamon stick
- 6 green cardimons
- 10 black pepper rounds
- 1 tbsp ghee
- 1 tbsp avocado oil
- 2 to 3 stalks of fresh parsley

Method

1) Heat ghee + oil in high heat in wok

2) Add cinnamon, cardimom, black pepper onions, bay leaf and ginger and saute until golden

3) Add chicken, remaining spices and salt. Sear Chicken in both sides 
4) Mix spices evenly

5) Add carrots

6) Add 3 cups water n bring to boil for 15mins. Then bring down medium heat to simmer another 25 minutes.

7) In a rice cooker, add 2 cups of rice and scoop the broth and fill it to the 2 cup line and set to cook. It's okay to have the minced items and spices to be in the rice cooker.

If you don't have a rice cooker, make the rice in your usual method (ie pot), but substitute water with same amount if the broth. Add more water if required.

8) Preheat oven to 500F on broil

9) Line baking sheet with foil n lightly oil it so chicken wont stick

10) After 25min mark, take chicken pieces and place on foil. If you have a food thermometer, ensure chicken internal temp has reached at least 165F. Let the remaining broth cook on low heat until it resembles a thick gravy.

12) Broil until the skin is slightly charred.

13) Once rice & Chicken is done, plate the rice and chicken. Scoop some gravy and place on them. Sprinkle some dried or fresh chopped parsley. ❤ .

SABLÉS AUX AMANDES 
Sans gluten, sans lait, sans oeuf, sans sucre raffiné

Pour une vingtaine de sablés :
• 80g de margarine bio (sans lait) ramolie
• 50g de rapadura (sucre de canne brut non raffiné)
• 80g de farine de riz
• 50g de farine de coco
• 25g de poudre d’amandes
• 1 pincée de sel

1) Mélangez le rapadura, le sel et la margarine ramolie jusqu’à l’obtention d’un mélange crémeux. Ajoutez la poudre d’amande.

First try at a #vegan #paleo #cookie recipe. Theyre softer when #baked than im used to working with, but i think they turned out pretty well.

Epinard, courgette, céleri, carotte, feta et lait de coco 🍴

• 1 pâte feuilletée sans gluten
• 1 cude de bouillon de légumes sans gluten
• 400g d’épinards en branche surgelés
• 200g de courgettes, carottes et céleri coupés en julienne
• 1 bloc de feta
• 1 brique de lait de coco
• pignons de pin à volonté

1) Faire cuire les epinards dans une casserole avec un cube de bouillon de légumes et un peu de lait de coco

2) Faire cuire la julienne de légumes

@222vegancuisine is a vegan small restaurant located in West Kensington. During the weekend, it gets over crowded and the wait for more than one hour, even with a booking. The place itself is a rectangular room that’s probably more suitable for a café rather than a restaurant. The place is very busy and it’s seems like they overbook, accepting customers who haven’t booked in advance. The tables are so attached to each other that you will probably have dinner with a stranger. Not the best place for an intimate candlelit dinner! The raw vegetables appetizer has three different dips: red bell peppers hummus, guacamole, and cashew cream. The texture of the sauces is intense and enveloping, you can easily binge on them if you just have had tortillas instead of cucumber sticks! The mushroom and seitan stroganoff is hearty and filling. @222vegancuisine is a vegan small restaurant located in West Kensington. During the weekend, it gets over crowded and the wait for more than one hour, even with a booking. The place itself is a rectangular room that’s probably more suitable for a café rather than a restaurant. The place is very busy and it’s seems like they overbook, accepting customers who haven’t booked in advance. The tables are so attached to each other that you will probably have dinner with a stranger. Not the best place for an intimate candlelit dinner! The raw vegetables appetizer has three different dips: red bell peppers hummus, guacamole, and cashew cream. The texture of the sauces is intense and enveloping, you can easily binge on them if you just have had tortillas instead of cucumber sticks! The mushroom and seitan stroganoff is hearty and filling. It’s vegan steamed cake that’s pumpkin-flavored,oil-free.
I also made pumpkin puree and pumpkin cream.
Why do I like pumpkin this much?😆 I don’t know why but it’s good to have this cake for breakfast in this wonderful morning anyway😋
