I think I had one in my lunch box every day for like 3 years - I’ve always been a creature of habit 😬 I’m still wondering how they got the circular bread to stick together so the jelly didn’t spill out 🤔 // #thefitpeach .
dEATS 👉🏻 sourdough bread + @georgiagrinders almond butter + homemade raspberry jam (heat handful of frozen raspberries in pot until soft enough to mash with fork. Add 1 tsp chia seeds and mash until desired consistency. Let sit for 5 mins so the chia seeds have time to do their thang 🤙🏻 )

✱ingredients- 1 1/3 cup almond flour, 3 tablespoons coconut flour, 1/3 cup almond butter, 2 tablespoons melted coconut oil, 1/4 cup + 2 tablespoons maple syrup, 1/2 teaspoon vanilla, allll the chocolate chips you want

✱directions- preheat oven to 350, combine wet and dry ingredients in separate bowls, add dry ingredients to wet ingredients and mix well, fold in chocolate chips and scoop batter into baking sheet, bake for 8 minutes or until golden

Really testing out my caffeine limit this trip☕️- what is it about the coffee here that is so damn good? Took a day trip to Orvieto. Picture your idea of a quintessential little Italian town- that’s this place. All charm. Bought a little bottle of olive oil with black truffle flakes- can’t wait to douse all the veggies in this bad boy when I get home😜 I know, *fancy*. I’m not usually a souvenir person unless it’s edible LOL. What about y’all, souvenir or nah?

I learned from an early age that diet and nutrition were the key to my goal of looking like @schwarzenegger 😂 I knew if I had any chance of being a great bodybuilder, it had to be built in the kitchen. .

I used to walk around my senior year of high school with a tub of rice, tuna and egg whites mixed together that I’d eat every 2 hours.  My friends, teachers, basically everyone looked at me like I had 3 eyeballs haha!

Nutrition is key!  No matter what you’re doing!  I grew a love for eating the right way and it’s helped me build my body but it’s also helped me to help others along the way with their eating habits and fitness goals. .

So I want to talk a little bit about the vegan/vegetarian nutrition. 🥗
There are many reasons why people might opt for a #vegeteriandiet 
Within the #meatless world, there is more than one eating style, some examples are: 👇🏻
• Some ppl eat diary & eggs (these are lacto-ovo-vegetarians).
• Some eat diary but no eggs (lacto-vegetarians) or eggs not no diary (ovo-vegetarians).
• Some eat plants, abstaining from any products that has been derived from an animal (Vegans). 🔸
And there are more types, because nowadays there are SO many ways to eat and classifications that it’s hard to keep up. 🤷🏻‍♀️

I am not a vegetarian but I do consider we have to be mindful of the type of meats we consume. I purchase organic, free range eggs (imported from Ireland). . In Dubai I don’t buy meat or chicken and I really try not to eat it in restaurants. It’s my own choice. 🙈
I recommend you try to consume only grass fed hopefully organic poultry and meat, wild caught fish. To be honest I do have days that I try to eat somehow a vegetarian diet.

So in the end: it’s your OWN personal choice. Whether you choose to eat meat, diary, eggs, fish, or not at all. Just make sure you consume a variety of whole foods to provide your body with the nutrients it needs. ❤️

Avocado Fries
Ingredients
for 24 fries

3 avocados, slightly firm
3 eggs
1 cup flour
1 cup panko breadcrumbs
1 teaspoon salt
½ teaspoon cayenne pepper, adjust to taste, or substitute with garlic powder
pepper, to taste
Slice the avocados in half, and then slice lengthwise into wedges.  Mix the bread crumbs with the cayenne pepper and salt.  Roll the slices in flour, then in the whisked eggs, then in the breadcrumbs.  Place the slices on wax paper on a baking sheet. Spray well with cooking spray. Add a sprinkle of black pepper if desired. Bake for approximately 12 minutes at 400˚F (205˚C). Flip all the way through and re-spray.  Serve with your favorite dipping sauce!  Enjoy!

Avocado Fries Ingredients for 24 fries 3 avocados, slightly firm 3 eggs 1 cup flour 1 cup panko breadcrumbs 1 teaspoon salt ½ teaspoon cayenne pepper, adjust to taste, or substitute with garlic powder pepper, to taste Slice the avocados in half, and then slice lengthwise into wedges. Mix the bread crumbs with the cayenne pepper and salt. Roll the slices in flour, then in the whisked eggs, then in the breadcrumbs. Place the slices on wax paper on a baking sheet. Spray well with cooking spray. Add a sprinkle of black pepper if desired. Bake for approximately 12 minutes at 400˚F (205˚C). Flip all the way through and re-spray. Serve with your favorite dipping sauce! Baby 💜 brussels were off the charts last night as I roasted them in garlic, oil & a dash of salt (side note: I barely use this when cooking now and don’t miss it because of all the other spices replacing it). Officially a Brooklyn resident! I’ve legit been eating @sweetgreen for the past 3 days straight (it never gets old) so decided to repost this bowl of red lentil pasta with my creamy cashew cheese sauce. I have a physical therapy appointment today and I'm trying to get the "okay" to head back to the gym and start working out a little 🙏🏼. There's a big Zumba party Friday and I want to go SO badly😭. So cross y'all's fingers that I get a good report card!🙏🏼

Spicy pan grilled chicken and avocado tacos topped with a creamy cilantro lime sauce 🍃These tasty #tacos are bursting with flavor and are made in under 30 minutes! 🌮🌮 -⠀

Ingredients⠀
For the Chicken⠀
1 pound chicken breasts cut into bite size pieces⠀
2 tbsp olive oil⠀
2 clove garlic crushed or minced⠀
1 tbsp chili powder⠀
1/2 teaspoon ground cumin⠀
1/4 teaspoon onion or garlic powder⠀
1/4 teaspoon kosher salt⠀
1 tbsp olive oil⠀
squeeze of lime optional⠀
cilantro lime sauce⠀
1/2 cup sour cream or Greek Yogurt or Mayo⠀
1/4 cup cilantro⠀
1 clove garlic⠀
1 teaspoon lime juice⠀
salt and pepper to taste⠀
To Assemble⠀
2 avocados, sliced⠀
6-8 small tortillas corn or flour⠀

Instructions⠀
To Make Chicken⠀
Chop 2-3 medium chicken breasts into small bite-size pieces. In a medium bowl whisk together olive oil, garlic, chili, cumin, onion powder, and salt. Add in chicken and toss to coat completely. Cover and refrigerate for at least 10 minutes or up to 48 hours. ⠀
To cook: Heat a large heavy-duty or cast iron skillet on high heat for 1 minute. Add the olive oil and chicken. Cook chicken in a skillet over medium-high heat until charred and cooked through, 8-12 minutes. Turn off heat and finish with a squeeze of lime (optional). To Make the Cilantro Lime Sauce⠀
Add the sour cream, cilantro, garlic, lime juice and salt & pepper to blender or food processor. Blend for 30 seconds to 1 minutes or until creamy. ⠀
To Assemble:⠀
Char tortillas on stove-top if desired. Add some of the chicken to the warmed tortillas. Top with avocado and cilantro sauce.⠀

Black beans on to soak for black bean and potato quesadillas. I am modifying a #21dayfix recipe idea of black bean and sweet potato quesadillas from a Pinterest board. No one here likes sweet potatoes. Except our dogs. Suppose I could use jicama or rutabega, but that would mean another trip to the store. Incoming weather so I'd rather not.

These smooth n creamy choc tarts are what we’re talking about today💕Seriously simple and quick to make, you could have them on the table within an hour..No joke...Lots of happiness lies within these babies😈 .
CHOC TARTS- makes 4
Base-
.
95g roasted Almonds 
30g dessicated coconut
20g raw cacao powder
7 medjool dates
1/2 tsp pure vanilla extract 
Pinch Himalayan salt .
Place all ingredients into a processor and combine. Blend until mixture sticks between fingers when pressed.. if it doesn’t stick keep adding another date until it does.

Place into loose bottomed tart bases, press firmly on the bottom and around the sides, place in fridge whilst you make the filling
.
Filling-
.
1 1/2 large Avocados 
1/4 Cup coconut cream
2 1/2 Tbls pure maple syrup
1Tsp pure vanilla extract 
130g Dark choc (70% cacao) -melted
Pinch of salt
.
Place all ingredients EXCEPT the choc into a food processor and blend until smooth and creamy. Add melted choc, and blend until fully combined. Pour choc into tart cases.
Place in fridge for an hour.
Add berries on top and serve!
Enjoy

MAPLE SUNBUTTER FUDGE CUPS 🍁

(v, df, nf, gf & paleo options; RSF)
.
Spent some time going back through my feed and realized that it has been far too long since I last whipped up Nicole @kalejunkie’s Maple Sunbutter Fudge Cups.  These no-bake nut-free treats are crazy easy to make and taste INCREDIBLE!
.
I basically followed Nicole’s recipe, except that I melted some of the ingredients together over low heat and added (optional) collagen peptides.
.
Directions for 8 cups (we eat these in one sitting so a quadruple batch may be needed 😆):
.
1) Line 8 muffin cups with silicone (here) or parchment liners
2) Melt together over low heat: 1 cup organic @sunbutter + 2 Tbsp pure 🇨🇦 maple syrup + 1/4 cup @silkenycoconutoil 
3) Stir in 1/2 tsp Ceylon cinnamon + 1/4 cup @organikahealth marine collagen (omit for vegan) 
4) Pour mixture into cups and top with @manitobaharvest hemp hearts & chopped @giddyyoyo 89% cacao bar
5) Place in freezer for at least 45 min
.
Store in the freezer & enjoy!!

Topped with our homemade DRAGON FRUIT NUT-BUTTER SPREAD:
In food processor combine 8 ounces chickpeas, 1/4 cup dragon fruit @pitayaplus , 1 tablespoon cashew butter @artisanaorganics , 1-2 tablespoons peanut butter @woodstockfoods , & 1/2 teaspoon beet powder. Process till smooth. Store in fridge. 
Toast also topped with a @justins mini dark chocolate peanut butter cup, espresso mocha cranberries @munkifood , 100% cocoa dark chocolate chips @paschachocolate , cocoa nibs @navitasorganics , Banana Berry Chia Muesli @sevensundaysmn , almond butter drizzle @woodstockfoods & cocoa powder @sunfood

Happy FRYday! Whenever I can eat the rainbow 🌈 with a side of sweet potato fries 🍠🍟 It’s a good day! Oh and Almond butta drizzle on everything! If you haven’t tried it... I’m telling you, you need to! 🥜🌱😋

Half an avocado 🥑 Filled with almond slices & pumpkin seeds, Japanese White Sweet Potato Fries, chickpeas, Brussel sprouts, roasted carrots 🥕, raspberry bellavitano @sartoricheese cheese, on a bed of fresh spinach on a sprouted Whole grain BEET 💘 wrap @angelicbakehouse 🙌🏼 Drizzled with almond butter @woodstockfoods sprinkled with cinnamon, curry spice & black pepper. 
White Sweet Potato fries 🍟 - I simply slice and bake on a parchment paper lined cookie sheet along with the carrots 🥕 and Brussel sprouts. All together at 350 for 75 minutes. Flipping half way. I lightly season after I take them out.
