The most crisp and juicy mini-watermelon I’ve had so far this season 😍 Eating it with pepita seeds though since the melon was modified to be sterile/seedless. On its own, seedless watermelon gives my stomach a weird (indigestion?) feeling but snacking on pepita seeds along side of it balances the nutritional content of the melon back out, in my opinion, and digests perfectly. (Soaked and dehydrated seeds of course 😜 Removes the physic acid!). I’m so happy all of my favorite fruits are coming back into season! I’m eeeaagerly awaiting the black diamond seeded watermelon variety, and golden honeydew melons! They are actual candy!!! 🙌

Can you spot the imperfection? During this past growing season, these almonds got slightly insect-damaged. While they have a few marks on their skin, they’re completely safe to eat, 100% delicious, and 110% cute. Because of how they looked, the grower couldn’t find a local market to sell them, so they were going to be sent over to Europe - increasing the food miles and carbon footprint of this already resource-intensive crop. So we stepped in, bought them, snacked on them, loved them, and are thrilled to be offering them as an add-on to your next Imperfect box. How is that for a happy ending?

Friday off means cleaning out my fridge and organizing 
Plant based diets don’t have to be boring or expensive 
I do most of my shopping at @traderjoes cus it’s close to me but they have reasonable prices for good quality. They also have a decent amount of vegan friendly food 
My staples : sprouted tofu, tempeh, mushrooms , meatless meat, sriracha baked tofu ( great on salads) 🥕 carrots are for my dogs 🐶 🐶- they too love veggies

When I say I ate this exact same burrito from the same place a minimum of 12 times I am not lying 🚫🧢 the only way I could describe it to others was “follow the road along the soccer field and find the last stand that has iron boards as tables” 😭 they threw all the veggies right on the grill, including cactus, broccoli, onion, pepper, beans, rice, and I added mashed potato and avocado 🥑 served with the 3 best sauces that I would literally drink like a beverage 🤤 I need méxico street food in my life @chipotle you do not even come close 🤚

Easter Spring Vegetable Platter. Not much chopping, cooking, washing up, pans or hassle! Just buy & assemble everything on a platter. Easy entertaining. Swipe for more platter ideas.

Kids can try new things or just take what they like. Easy when you have lots of guests or kids round.

Here is my list of ingredients that I usually buy when I want to do platters (it varies according to season and location) incase you want to go shopping/plan one for entertaining too!

Platter ingredients possibilities.

Vegetables:  Peppers, Cucumbers, Carrots, Radishes, Celery, Cauliflower, Cherry tomatoes, Peas, Asparagus, Salad (to line the base of the platter)

Dips:
Hummus/Guacamole/Sour cream/Yoghurt.

Meat/fish:
Smoked salmon, Saussicon, Bresaola, Airdried Duck, Ham, Salami, Prosciutto.

Cheese: (whole/slices or cubed)
Mixture of Goats cheese, Hard cheeses like Gruyere or Comte, a Blue cheese and a soft Camembert or Brie.

Other:
Eggs (soft boiled), Crackers/bread sticks, Nuts (eg pecans, pistachios, almonds, walnuts, macadamia,hazelnuts), Sun dried tomatoes, Chutneys, Olives, Gherkins

To decorate:
Fruit (Berries, Passionfruit, Pomegranate, Grapes, Tangerines), Herbs (eg dill , rosemary sprigs, thyme, chives, basil)

Extras
Have cocktail sticks, platters, small bowls, napkins at the ready.

I am sharing another recipe on how to use your leftover almond pulp after you have made your almond milk. These crackers are great for a snack and don’t contain the usual unrecognizable ingredients that you find in the grocery store. The kids said they tasted just like pita chips. .
Mix 2 cups of almond pulp with 6 tbsp coconut oil, 2 tbsp chia seeds, a pinch of salt, 2 tbsp dried parsley, 1 tbsp dried thyme, 3 crushed garlic cloves and 2 tbsp of water. Mix well, press together and roll out in between parchment paper until 1/8 inches thin. 
Use a knife to score the dough into squares and poke holes in each square with a fork. Bake the crackers in the oven on 350° for 10 mins, remove from oven, flip and bake for another 15 mins until golden. Let cool down before serving.

I’ve shared that we usually rock it with roasted veg and can pull through with raw veggie sticks, but salads often flop. Since salads are one of my fave ways to get in veggies, I can’t stop, won’t stop until we’re all gaga for the greens. •

This week Little Lady was open to trying some homemade dressing, a sure step up from the globby ranch she normally dips with. She not only loved it, but got super excited about the idea of making her own dressing. The Majumdar test kitchen opened for business and we have the makings of a yummy salad and the start of a salad lover. Even brother joined in the tasting and a bit of eating. •

We’d like to share our Kiddo Approved Dressing recipe and see what variations your family makes 👇•

2 tsp dijon mustard •
1 kid-sized handful of chopped parsley •
1 tsp lemon zest •
4 Tbsp olive oil •
1 Tbsp cider vinegar •
1 Tbsp lemon juice •
1/2 tsp salt •
Fresh ground pepper to taste • •
I chopped and diced radishes, apples, carrots, grapes and olives and the kiddos made and dressed the dinner salads. They were so proud! They didn’t finish their salads, but they got an A for effort and are certainly more interested in the whole salad idea. •

☕️ Cold brew coffee for hot mornings.

Broccoli Soup | شوربة البروكلي

If you're looking for a creamy, light  soup that is loaded  with flavor, then this  broccoli soup is healthy and easy to make! .
.
Ingredients 
1 pound broccoli
1 small potato
2 tbsp olive oil
2 garlic cloves
Salt, pepper, cumin for seasoning
Vegetable broth or water
.
.
Method 
Heat the olive oil in a large pot over medium heat. .
.
Once the oil begins to shimmer, add the onion and cook for 3-4 minutes, until semi-translucent. .
.
Add the garlic and salt,  and cook for 2-3 minutes more, until the garlic is fragrant.
.
.
Add the  potatoes, broccoli, vegetable broth or water  and bring to a boil. .
.
Cover and reduce the heat to low. .
.
Simmer for 20 minutes, or until the broccoli is tender.
.
.
Use an immersion blender to blend the soup until smooth.
.
.
Stir in the cumin and pepper, then ladle into bowls.
.
.

500غم بروكلي
1 بطاطا حجم صغير
1 بصله صغيره مقطعه
2 ملعقه كبيره زيت زيتون
ملح ، فلفل اسود وكمون 
ماء .

سخني  الزيت في وعاء الطبخ  على نار متوسطه... ثم اضيفي البصل المقطع واطبخيه لمدة 3 دقائق او حتى يذبل
.
.
اضيفي الثوم والملح واطبخي ل 3 دقائق اخرى .
.
اصيفي البطاطا المقطعه والبروكلي والماء ( الماء يغمر البطاطا والبروكلي) 
بعد الغليان يغطى الوعاء وتطبخ المكونات على نار هادئه لمدة 20 دقيقه او حتى يستوي  البروكلي تماما

باستخدام الخلاط اليدوي او العادي تخلط المكونات حتى تصبح الشوربه ناعمه و كريميه

To those transitioning to a plant-based diet, yes it can take time for some people and sometimes you may have certain cravings for particular foods like cheese or eggs and may not be conscious enough to resist these cravings at the time. Don’t beat yourself up over moments like this. It is what it is. As long as you know that in your heart, you are a good person who is making an effort to be a better person and reduce suffering in the world, you will eventually succeed in making good choices. We all have moments. Acknowledge these moments so that you can be more conscious in the future, learn from it, educate yourself more on the ethical side of veganism and the range of alternative vegan options for milk, cheese, and eggs available to you (and there are plenty), because this will help in the future when making food decisions and buying animal-friendly products.

The last breakfast post was to inform people about what happens in these agricultural and dairy industries, because some folks do not know what goes on. They are completely kept in the dark and have no idea. If you are not given the knowledge, you are having a crucial choice taken away from you that can help animals, the environment, and your body. I originally thought that if I transitioned to veganism I would starve, which cannot be further from the truth. Many, many, many years ago, I did not even know why people went vegan in the first place and assumed it was because they wanted to lose weight 😆 (a plant-based diet can also help you bulk up and sculpt your body quite nicely if this is what you wish, depending on what you eat). This is the level of ignorance that vegan people have to deal with. Much love to you all 💚.

Dealing with high stress, tension, anxiety, mental exhaustion and overall fatigue in a fast paced world can really take its toll on us. For this reason, I always try to implement a daily tea to help with the many stresses we deal with regularly. The different herbs can either help me balance, energize or calming my nerves and body.

My love and appreciation for herbs and plants just keeps growing, the more you see the incredible work it can do. Herbs used regularly is a great way to maintaining and promoting a healthy system. Our bodies absorbs their healing properties and help build a stronger immunity to many environmental and stress factors.

I prefer taking my herbs in my cup of tea because it ensures my daily intake of both preventative medicine alongside the act of mindfulness. Two birds one stone sort of deal.
