Do you guys ever go to the farmers market and buy veggies with no plan for what to make? I stopped by the farmers market Wednesday and picked up some lacanito kale & garlicky green onions from @jbgorganic and set out to cooks dinner and came up with this wild rice and mushroom bowl with sautéed chopped kale. I seasoned it with  Fresno Chile, onions, cinnamon, cayenne, salt & pepper, and cumin. YUM.⁣

#dEATs 1: almond flour tortillas (so expensive but seriously so worth it) + arugula + buffalo cauliflower (sauce made from hot sauce, butter, and garlic powder) + avocado 🥑 + vegan cashew ranch + sprinkle of chili powder

#dEATs 2:
Ingredients:
- 1/2 head of cauliflower, chopped into florets
- 2 tbsp butter or vegan butter
- 1/2 - 3/4 cup hot sauce (depending how hot you like it)
- 1 tbsp garlic powder
- 2 handfuls kale
- 1/2 avocado, diced into chunks
- 2 tortillas (I used Siete almond flour kind)
- Dressing of choice

Directions:
1. Preheat oven to 400F. Cut cauliflower into desirable sized florets. Place on oven sheet, cover in garlic powder to taste, and bake for 25 min.
2. While cauliflower cooks, melt the butter for 15 sec in microwave. Mix in the additional garlic powder and hot sauce. Stir to combine and set aside.
3. Place 1 tsp olive oil in pan over low-medium heat. Sautee kale until crispy, about 5-10 min.
4. Take cauliflower out of oven and coat in buffalo sauce mixture. Place back in oven for additional 10-15 min.
5. Heat up tortillas. Place kale and avocado chunks. Take cauliflower out of oven and place in tortillas as well. Top with dressing and any additional desired spices.

These little beasts are 40% protein, 37% fiber and coming from the legume family, they are completely plant based! They’re also gluten free and 90% less carbs than couscous. 🎉

Recipe makes 4 serves
.
Ingredients:
1 kg of Turkey mince
100 grams of marinated sun-dried tomatoes (oil drained)
1 tablespoon of minced garlic
1/8 of a cup of lupin flakes
salt & pepper
2 zucchinis sliced into ribbons
2 bunches of broccolini
2 gloves of garlic (crushed and chopped)
1 tablespoon of Olive oil
.
Method:
1. Pre-heat the oven on 180 degrees.
.
2. Chop the sun-dried tomatoes finely.
.
3. Mix the turkey mince with chopped sun-dried tomatoes, lupin flakes, garlic and salt and pepper.
.
4. Roll into 12 small balls.
.
5. Place the turkey balls on a baking tray lined with baking paper and bake for 35 minutes.
.
6. 10 minutes before the turkey balls are ready slice the zucchini.
.
 7. Soak the broccoli in boiled water for 5 minutes and drain it well.
.
8. Then heat the olive oil in a wok, add the crushed chopped garlic cloves, broccoli and zucchini strips and toss for 5 minutes so they are both crunchy.

9. Serve 3 turkey balls with a side of greens and enjoy.

Not much to look at but OH EM GEE was this AMAZING. 
Kale pasta (literally, its just kale!!) with lentil pasta topped with crack chicken (chicken breasts, black beans, Rotel, cream cheese cooked all day in the crock pot). Easy ✔️ Clean ✔️ No added sugar ✔️ Keep it simple. Keep it whole.

Made my tomatillo chicken and sweet potato chowder that’s on the blog today but simplified the ingredients a bit. I dumped chicken thighs, broth, tomatillo salsa, and chopped up sweet potatoes in a Dutch oven and cooked it at 325 covered for 3 hours. This morning for breakfast I made up a big bowl of apple cinnamon oats 🤗 I love having warm oats with allll the toppings - it’s definitely one of my top choices for breakfast 🙋🏼‍♀️ .

To make the oats I just used 1/2 cup steel cut oats and cooked them following the package directions (1 cup of water and simmered for 8 minutes). For the apples I warmed them up 2-3 mins on each side in a pan on medium heat, and then tossed in roughly 1 tsp of cinnamon 😋 I mixed in 2 tsp of maple syrup with the oats, and topped it with some pumpkin seeds and chopped walnuts 🥰 .

Roasted Brussels (tossed in garlic, coconut oil and coconut aminos), roasted tomatoes on the vine and gnocchi (tossed in olive or avocado oil and baked in cast iron on 450 for about 25 minutes (shake pan every few 8 minutes or so). Chimichurri: 1 head of cilantro, one head parsley, 1 cup kale, 1 handful basil, 3 cloves garlic, 1 tablespoon coconut aminos, 2 shakes red pepper flakes, juice from 1/2 lemon squeezed, 1/2 teaspoon salt, 1/4-1/3 cup olive oil. Process in food processor until smooth. •

Apple cider vinegar (ACV) is helpful for a million reasons. It is obviously a vinegar, but it has a very balancing affect on our PH levels. We always feel like things are working “right” after consuming ACV, as it encourages healthy digestion.

It’s helpful to many of our organs, but we want to point out how much it helps our stomach! It’s commonly assumed that acid reflux means that our stomach acid is too acidic. In reality, it’s most likely not acidic enough. Our esophagus may not recognize the stomach acid for what it is, allowing it to pass through. It’s actually very common due to the standard american diet (SAD). ACV can help this issue by balancing that acidity!

ACV shouldn’t be taken straight. Always dilute it into water (we put about 1 TBSP or a big splash per about 1 cup of water). Truthfully, it doesn’t taste good, but we’ve only noticed drinking it to be more and more easy with time. If you hate the taste, add more water! The more diluted, the more tolerable. Ingredients
3-4 medium zucchini
1 pound raw shrimp peeled and deveined
1 tablespoon olive oil
2 tablespoons butter
3-4 garlic cloves minced or crushed
1 teaspoon Italian seasoning or oregano optional
1/4 teaspoon of red pepper flakes adjust to taste
Salt and pepper to taste
Freshly grated parmesan or chopped parsley to garnish, optional

Instructions
Wash and trim the ends of the zucchini. Make the zucchini noodles using a spiralizer and set aside.
Heat 1 tablespoon oil in a large pan over medium-high heat. Add the shrimp to the hot pan, season with salt and pepper cook for 1 minute. Add the garlic, Italian seasoning, and crushed pepper to the pan. Cook for another minute per side or until shrimp is light pink and garlic is golden brown. Transfer to a bowl.
Add the Butter and zucchini noodles to the same pan, season with salt and pepper and cook for 2 minutes or until tender.
Return the cooked shrimp to the pan and stir through. Garnished with freshly grated parmesan cheese or/and chopped parsley.

Ingredients 3-4 medium zucchini 1 pound raw shrimp peeled and deveined 1 tablespoon olive oil 2 tablespoons butter 3-4 garlic cloves minced or crushed 1 teaspoon Italian seasoning or oregano optional 1/4 teaspoon of red pepper flakes adjust to taste Salt and pepper to taste Freshly grated parmesan or chopped parsley to garnish, optional Instructions Wash and trim the ends of the zucchini. Make the zucchini noodles using a spiralizer and set aside. Heat 1 tablespoon oil in a large pan over medium-high heat. Add the shrimp to the hot pan, season with salt and pepper cook for 1 minute. Here’s the final product from my stories last night: grain-less tahini brownies from @ambitiouskitchen 🙆🏼‍♀️ They are truly SO GOOD. I highly recommend them if you have major sweet tooth and chocolate tendencies like me! I followed the recipe from her website exactly except I swapped the maple syrup for honey (same amount). She suggests baking for 22-30 minutes, but I would recommend 22 minutes or less especially if you use a nonstick baking pan like I did. The edges were starting to burn and I only had them in for 22 min. The middle is perfect though 👌🏼 I also added a little pink Himalayan salt to the top with that chocolate drizzle.

Start off by blending your dates & almonds in a food processor until evenly chopped. Then add in your cacao nibs, coconut (save some for rolling), & Chocho Powder.
Then, use a tbsp measurer to scoop out the batter & roll into small balls. Then roll into your leftover toasted coconut.
Store in an airtight container in the fridge. They won’t be there for long! 🤤

Nothing better than some roasted cauliflower steaks 🤤 Add it to a salad, some mashed potatoes, or enjoy just by itself because it’s just THAT good 🤩 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Deets👇🏼
▫️1 head of Cauliflower
▫️3 tbsp Tahini
▫️2 cloves Garlic, minced
▫️2 tbsp Olive Oil
▫️Seasonings - Salt, Smoked Paprika, & Turmeric
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 450°.
Start off by prepping your cauliflower & cutting them into 4 steaks (sometimes it doesn’t work out & you only get 2-3 intact steaks, nothing wrong with that!). Then in a small bowl, add in the remaining ingredients. Use a brush to coat each side of your steaks with the tahini mixture. Lay on a baking sheet & roast in the oven for 20 mins.

🥮 Tahini Cauliflower Steaks ⏲ Under 30 mins | Serves 2 Nothing better than some roasted cauliflower steaks 🤤 Add it to a salad, some mashed potatoes, or enjoy just by itself because it’s just THAT good 🤩 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets🏼 ️1 head of Cauliflower ️3 tbsp Tahini ️2 cloves Garlic, minced ️2 tbsp Olive Oil ️Seasonings - Salt, Smoked Paprika, & Turmeric ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat oven to 450°. 1 bunch spinach (washed)
10-12 deveined shrimp 🍤
1 medium diced onion
1 tsp turmeric
1/2 cayenne (add more if you like)
1/2 cumin
2 tbs cilantro
Oil
Once onion turns brown add turmeric, cayenne, cumin. Mix about a minute. Add the shrimp. Mix about one more minute. Next, add spinach. Cook about 3-4 minutes. Garnish with cilantro. Happy cooking! Enjoy!!!

I cooked it with onion, ginger garlic paste, garam masala (cardamom, cinnamon sticks, cloves, bay leaf, whole cumin, whole pepper, pepper corn), turmeric, cayenne, cumin, coriander and salt!
