You know those irritating times, when you are so excited to eat, & then you bite the inside of your lip...in the same place that you bit it the week before? Yea, that happened to me when eating this sandwich. I was so hungry, what can I say—no time to wait...no time to waste.
As you guys probably know by now, that although I feel it’s insanely important to pay attention to what we eat, I admit to being the queen of super fast, quick, easy, no-fuss meals. I’d like to tell ya that I’m some gourmet & innovative kitchen connoisseur, but it ain’t true one bit! And I’m perfectly okay with that, because I still eat well overall. I still buy good quality food, but I just like to accomplish things in the left lane of the freeway: FAST.
Maybe it’s the Gemini in me—very little patience, instant gratification...I’m just that way, especially when it comes to the kitchen.........or putting together anything that requires a manual or directions, forget it.
I also ️ breakfast food anytime of day—often highlighting it on my feed—and I made this for lunch today, before tackling the long to-do list I got goin’ on. Just a simple little egg/spinach sandwich on my fav toasted english muffin (w/ some grass fed butter). It can’t get much easier than this.
