Tomato Florentine soup was on the menu today:
Saute a chopped onion in olive oil; add 28 oz chicken bone broth, 8 oz tomato sauce, 1/2 cup water, and a 14 oz can of diced tomatoes. Summer 20 minutes. 
Use an immersion blender to puree the soup until mostly smooth. Add 2/3 cup gf shell pasta and summer at a low boil until done, stirring occasionally. Add two cups baby spinach. Season with salt and pepper, and top with Parmesan if desired.

1/4 cup olive oil⠀
2 small tomatoes, sliced⠀
1 cup shredded cheese of your choice⠀

Preheat oven to 375 degrees or cook on the grill.  Line a baking sheet with parchment paper; set aside.  Cut each zucchini in half horizontally, then scoop out the seeds,  Brush with olive oil and sprinkle with dry Cheeseball Mix.  Top with sliced tomato, cheese, and sprinkle with topping packet.  Bake for 20 -25 minutes until soft.  Serve warm!⠀

8 oz rice noodles
1 tbsp coconut oil 
1 cup of chicken 
Broccoli, carrots (slices), red pepper, peas
Peanuts / sesame seeds 
3 tbsp veggie broth 
2 tbsp coconut amigos 
1 tbsp red pepper flakes 
2 tbsp Tamara or soy sauce 
1 tbsp crunchy peanut butter

Directions: 
1. Cook the noodles per their instruction.

4. Add the sauce and veggies to the noodles.

I love the fake orange cheesiness as much as the next 1990’s kid... but for the most part, I like to make my own Mac and cheese! It barely takes any longer than the packaged stuff and is loads better for you! I don’t follow a recipe, but I’ll run you through the steps... cook 1/2 box of pasta. Drain. In the empty (hot) pot, over medium heat, melt about 2 TBS of butter. Add  2-3 TBS flour. Whisk together until smooth and cook for 1 minute. Add 2 cups milk. Simmer for a couple of minutes while whisking until sauce thickens. Add 2 cups shredded cheese (I use half cheddar and half mozzarella). Add Pasta and combine, sprinkle with salt and pepper to taste. 
Are you a fan of homemade Mac and cheese? Or are you a ride or die Kraft fan?? No judgment here! If I’m using packaged, you can’t beat the thick and creamy style from the Western Family brand! 🤤

When chickpeas are on sale, roasted chickpeas becomes my go-to snack! They're so easy to make! Just coat your chickpeas with oil, garlic powder, and/or paprika powder. Then depending on how much time you have, roast at 375F for 35-45 minutes or roast at 400-425F for 10-15 minutes then do a quick broil (aka the rush method I did this morning before going to work!). What is your go-to snack?

Tonight’s dinner was inspired by @tacobell (don’t judge) and my recent trip to Nashville, Tennessee 😝Nashville hot chicken crunch wrap!

It tastes sooo much better than it looks lol. I put organic blue corn @tostitos in there for the crunch. It was my first go at a crunch wrap and I need bigger wraps, that’s for sure lol. It was hard to keep it all from falling apart.

I needed to share this because I want you all to have this Nashville hot chicken recipe. I just basically took all of the seasonings in my spice cabinet that were red, and mixed them all together - haha. This is a healthier version of course because it isn’t fried and all oily, but just as tasty in my opinion.

Ingredients:
•3 T cayenne pepper
•2 tsp chili powder
•2 tsp paprika
•1 tsp salt
•2 T light brown sugar
•chicken breast

1. Broil the chicken until cooked through and shred.
2. Mix the seasonings together in bowl. 
3. Toss the chicken until fully covered.
4. Eat it in a crunch wrap if you are feeling taco bell-y. (Yes that is a verb) 
5. Happy Tummy, Happy Life😋

Ingredients:
1 small can Campbell’s French onion soup + 1 C water
1 tsp Worcestershire sauce 
1/4 tsp grainy mustard
1/3 yellow onion, diced
Salt & pepper
1 Pkg Aidells Caramelized Onion Chicken Meatballs
Splash of heavy cream
Parsley & Basil , to garnish 
To Prepare:
1. Simmer soup mixture with first 5 ingredients 1 hour.
2. 15 minutes prior to serving, add in the meatballs and cook on medium until heated through and liquid is reduced a little. Garnish. Serve with favorite pasta, baguette or rolls, or rice! Enjoy! .

Rosemary Peppered Steak 🥩 
Super quick to make! You will need the following ingredients:
•Beef steak
•Straight Chips @mccainmx •Salt & Pepper
•Rosemary
•Butter
•Green beans
•Cherry Tomatoes
•Coleslaw
•Peppercorn Sauce

First marinate the steak with heaps of butter, pepper, rosemary and sprinkle salt. Now prepare the chips, straight cut chips taste better with steak! 
In a pan, melt butter and wait till it’s hot! Add the steaks and let one side get cooked. Keep adding the juice of the butter all over the steak and add more pepper. I like my steak medium to well done, so I would cook each side for 5mins. In a separate pan, add butter again and fry the green beans and tomatoes for 5mins! Sprinkle some more pepper and salt and it’s ready to serve!! Serve with coleslaw and peppercorn sauce!

Chicken Tikka Masala Recipe

INGREDIENTS:
1 cup yogurt
1 tablespoon lemon juice
2 teaspoons ground cumin
1 teaspoon ground cinnamon
2 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper 
1 tablespoon minced fresh ginger 
4 teaspoons salt, or to taste 
3 boneless skinless chicken breasts, cut into bite-size pieces 
4 long skewers 
1 tablespoon butter 
1 clove garlic, minced 
1 jalapeno pepper, finely chopped 
2 teaspoons ground cumin 2 teaspoons paprika 
1 tablespoon salt, or to taste 1 (8 ounce) can tomato sauce 
1 cup heavy cream 
1/4 cup chopped fresh cilantro 


DIRECTIONS:
In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and salt. Stir in chicken, cover, and refrigerate for 1 hour.

Preheat a grill for high heat.
Lightly oil the grill grate. 

Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.

Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

🇫🇷❣️‼️ SAVORY CREPES ‼️❣️🇫🇷 these were ~magnifique~ so ofc i had to share. started off w a very simple crepe recipe (below) & sautéed some onion, red pepper, spinach & tomato until soft + sweet. i smeared some basil pesto on the crepe, piled the veggies on, sprinkled on some feta, folded it up & then it was time to eat - bon appétit!!! superrr delicious 🤩😋 here’s the crepe recipe i used:

2 eggs beaten
1/2 cup flour
1 tsp baking powder
1/2 tsp salt

My one regret is that I didn’t make more . This was the easiest snack to throw together the other day!  I only made a few as a test batch, but next round I’m making a LOT more of these bad boys.👩🏻‍🍳

🌶 slice some jalapeños lengthwise and use a spoon to scrape off the seeds to make little boats
🌶 line the boats up in an oven-safe dish and sprinkle a dash of salt across the peppers
🌶with the cheese of your choice (I used provolone!) fill the jalapeños
🌶top with fresh cilantro if you have it / want to
🌶roast at 425 for 15 minutes, or until the cheese begins to brown

I probably fooled my Korean friends because these crispy zucchini parmesan pancakes look exactly like 부추전 (buchu-jeon) or chive pancakes! (My batch turned out a tad too big 🤷🏻‍♀️ bite-sizes ones for next time~) Dipped in a creamy ranch sauce, they make the perfect afternoon snack! // What you’ll need: 2 medium zucchinis — grate them and squeeze out ALL the water to ensure a crunchier pancake. 1 tablespoon of all-purpose flour, sprinkle in any kind of Italian seasoning, a pinch of salt & pepper, 1/2 cup of grated parmesan 🧀, 2 cracked eggs. Mix everything in one bowl. Drizzle some oil onto your pan, turn on your heat to medium and make your pancakes — whatever size you’d like 😂

T minus 3 days til we leave for our very first beach vacation with our little guy!!! 🏖🏖 That means I’m pulling dinners out of my 🍑!!! Trying to use up all the stuff we have here so as not to let anything go to waste. These Mashed Avocado + Black Bean Quesadillas are on the menu for Thursday—about the most exciting dinner is gonna get this week 🤷🏻‍♀️ Well, that’s not true, Breakfast for dinner will also be happening and I love that too!

Looking for an easy, healthy 10-min meal w/ easy clean up? 🙋‍♀️ I've got one right here! This is one of my favorite kinds of meals: drizzle, dump, stir, pour, crack. It's that simple! 👏🏻👏🏻⠀

Drizzle EVOO into an oven-safe skillet (mine's cast iron). DUMP in some zucchini noodles (I used 1 lb. that were pre-spiralized from @freshdirect becuase I believe in delegating meal prep sometimes!). STIR until slightly softened. POUR in some marinara sauce. (I didn't measure, but think it's about 2-3 c). Let your mixture simmer a little & then CRACK in 4 eggs. Put in an oven pre-heated to 375 & cook for 8-10 min, until egg whites have set. This made 2 really hearty servings. You could serve this w/ some whole grain bread for DUNKING & you could SPRINKLE w/ parm or feta.⠀⠀

I really, really love sugar cookies, decorating Christmas cookies is one of my favorite things! ☺️🎄⭐️❤️
But it’s June, not December 😉

So these soft & chewy cookies will do for now!🤷‍♀️ 1 C of butter
1 C of sugar
•mix•
1 egg
1/2 TBSP Vanilla extract
•mix•
2 1/4 C flour
1/2 TBSP baking soda
1/2 TBSP baking powder
•mix•
•Bake at 350 for 8-10 minutes ✨

Buenasss, paso rápido con mi hamburguesa de pollo y espinacas casera, vegetales y champis salteados en 3 min a fuego 🔥 vivo por me gustan aldente, y crujiente de puerro. .

Para la hamburguesa procesé las pechugas de pollo, un huevo, y las espinacas al vapor. Integré todo bien y condimenté al gusto. Cebolla en polvo, ajo, sal, pimienta .. siempre que hago, suelo hacer un kg de pechugas, y las hamburguesas las peso y de 100 gr. sale. 10 unidades 👍🏻 y luego congelo. ❄️
Hago variedad, la base el pollo. Y de ahí le agrego quinoa cocida por ejemplo, otras zanahoria rallada, otras cebolla caramelizada .. la imaginación es poder 💭
