Crispy, baby smashed red potatoes with a turmeric yogurt dressing! Such a simple and yummy side dish

Boil 10-12 baby red potatoes in water for about 15 minutes till it's fork tender
Line them up on a baking sheet and smash them gently with a fork. Drizzle with some olive oil and sprinkle  salt & pepper and bake at 450 degrees till crispy and slightly browned.

Blend a green chili or 1/4 tsp cayenne pepper, 1/2 tsp fresh grated ginger, 2 tbsp chopped cilantro, 2 tbsps lemon juice, 1 cup dairy free yogurt, salt, pepper. 
Drizzle the yogurt sauce on the potatoes and enjoy!!!

There is a point when you are vegan where a lot of things you wouldn’t think would ever become second nature...do become second nature. 🤷🏽‍♀️For example, my definition now of an easy meal is baking up some tofu and veggies on a sheet pan and pairing it with rice. Nothing really changed outside of be choices of what goes on my plate. The cooking is about the same. I use the same flavors I like to season my food. And it just makes meals easy. Things that seem impossible or difficult are often times a worry for change. If change is that scary, keep it as close to your normal routine as possible. Change one thing at a time. Swap something out for something else, but treat it the same way you would the original. There might be some additional small changes you might need to make to make it perfect, but at the end of the day we don’t have to make everything we do super complicated. 🙏🏽

Easy tofu bowl with volcano rice from @lotusfoods and sautéed onion and pepper. My husband decided to roast up some whole mushrooms and it was such a good idea. Just literally sprinkled a little salt on them when they came out of the oven. For the tofu, just cubed up some pressed tofu and tossed it with some soy sauce and a tsp of garlic chili sauce. Bake that in the oven at 400F. Or if you are lucky and have an airfrier, consider tossing it in there to crisp up. Yummy!

This richly flavored dish has chickpea/lentil pasta, green beans, bell pepper, sun-dried tomatoes, red onion, garlic, and a creamy sauce made with diced tomatoes, cashews, paprika, cumin, and thyme. It checks all the boxes for dairy free, gluten free, vegan, and organic 🌿

The organic chickpea lentil pasta I used contains a whopping 27g protein and 13g of fiber per 3.5oz, compared to generic penne pasta at 2.3g protein and 0.6g fiber per 3.5oz. It’s also a great recipe to get lots of veggies in while satisfying that craving for a rich creamy pasta dish 😍

Busy summer nights call for something easy and quick, with tons of veggies from the garden. Any veggies will do. Tonight, I sauteed a bunch of shiitakes, garlic, thyme, and rosemary in a big skillet with carrots, red & orange bell peppers, and beet greens. Then, I whisked up about 14 eggs from our chickens (in a separate bowl), and added salt. Slowly poured over veggie mixture in the skillet, and let eggs sit on low heat for a few minutes (without touching them) until set. Finish baking in a 350 degree oven for about 20 min. Boom. Frittata. Done.
