Dandelions contains considerable amounts of vitamins A, C, K, and B, plus minerals like magnesium, zinc, potassium, iron, calcium, and choline. Not too shabby for a weed!
Its used for loss of appetite, upset stomach, intestinal gas, gallstones, joint pain, muscle aches, eczema, and bruises. Dandelion is also used to increase urine production and as a laxative to increase bowel movements. It is also used as skin toner, blood tonic, and digestive tonic.
Some people use dandelion to treat infection, especially viral infections, and cancer.
In foods, dandelion is used as salad greens, and in soups, wine, and teas. The roasted root is used as a coffee substitute. Recipe- Dandelion & Lime cooler
Take the yellow parts (use leaves and stems in salad) and seep in hot water for 10 minutes. Add honey/sugar to taste and lime juice. Refrigerate until cool around 3/4 hours.
Strain out the flowers if you wish or serve as it is
