FOR THE DONUTS
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1/4 cup oil
1/2 cup sour cream
1/3 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
FOR THE CHOCOLATE ICING
1 cup powdered sugar
1/4 cup unsweetened cocoa powder
2 to 3 tablespoons milk
about 2 tablespoons rainbow sprinkles optional garnish

TO MAKE THE DONUTS:
Preheat the oven to 350 degrees F and mist a donut pan with non-stick spray.
Place the flour, baking soda, and salt in a large bowl and whisk to combine.
Place the oil, sour cream, sugar, egg, and vanilla in a smaller bowl and whisk until smooth.
Pour the liquid ingredients into the dry and fold together until combined (batter will be lumpy).
Transfer the batter to the prepared pan and bake for 13 to 15 minutes, or until a toothpick inserted in the thickest part of a donut comes out clean.
Cool completely, top with chocolate icing, and garnish with rainbow sprinkles.
TO MAKE THE CHOCOLATE ICING:
