@chocolatbonnat — This is the Bonnat Los Colorados 75% bar made with cacao from Ecuador — and I was fully prepared to slam it. What a shame that would have been.
After taking my first bite, NOTHING happened. Literally nothing. I barely tasted anything. And then I realized that this bar is a game player. It's reticent. It plays hide and seek. It wants to be chased. So, I reluctantly gave in. I chased.
The few times I was able to catch it, I tasted rich notes of apricot and plum. Then, saltine cracker. Finally, a very delicate cocoa flavor emerged.
This bar punishes those who munch. That's how it filters the worthy from the unworthy. To really experience the taste of this bar, I realized you should barely take a bite, if at all. Don't help it along. Just let it melt. Patiently wait. Your FULL attention is required. It's like fishing. When you feel a little tug, then you have to focus your senses like a laser beam. If you do, you will be rewarded.
This is not a bar for the lazy. But I promise I wouldn't encourage you to make the effort if it wasn't worth it. - 4 hours ago
