These Russian cookies are so yummy and soft, They just melt in your mouth and they are fun to make with kids!! A must try. Dipped in chocolate, rolled out in strawberry wafers
INGREDIENTS: ️2 sticks butter, softened ️5 hard boiled egg yolks
️2 cups flour ️1/3 cup sour cream ️1/4 cup sugar
️2 teaspoons vanilla ️1/2 teaspoon baking soda
1️⃣preheat oven to 350 degrees. Line baking sheet with parchment paper.
2️⃣hard boil 5 eggs. Once they cooled, mash the yolks with a fork really really well, they have to be almost powder like.
3️⃣cream butter and sugar together for about 5 minutes, until light and creamy.
4️⃣add the egg yolks, mix well. Then add sour cream and vanilla, and mix well again.
5️⃣whisk the flour and baking soda in small bowl, then add to batter and mix just until incorporated, don’t over mix.
6️⃣roll the batter out into 1 tablespoon size balls.
7️⃣place them on baking sheet and bake about 12-15 minutes.
FOR THE GLAZE: ️1 1/2 sticks butter ️1/2 cup milk ️1 1/2 cups sugar ️6 tablespoons cocoa powder ️1 package vanilla wafers (8oz)
1️⃣melt the butter in a saucepan, then add the rest of the ingredients and bring to a boil. Pour glaze into bowl. ( dip the cookies while the glaze is still warm)
2️⃣place wafers into ziplock bag, and using a rolling pin roll them out until they are very fine, or use a food processor. Put the wafers in a bowl.
3️⃣dip each cookie in the glaze then roll in vanilla wafer crumbs so they will be fully covered. Lay them out in a single layer to set and dry.
