My favourite breakfast at the moment after a long, hard workout is Chia Seeds! 
They might look a bit like tadpoles.. BUT 25g with some protein powder, yogurt & berries they’re delish!

The only food these cats have ever turned their noses up at has been chia seeds. They were right.

Turns out that for me they are pretty toxic. Part of me is glad to have a totally non terrifying explanation for the creeping back pain and migraines that we’re becoming alarmingly frequent. The other part is now wondering what a quick, easy breakfast looks like without they. 
This pair have been looking at me in that resigned, slightly disapproving way that only cat people know. Not impressed by my early start as it had nothing to do with feeding them. Still, I’ve been glad of the morning company today. Disapproving looks and all.

I really think this should come with the title ‘real blw’.... it’s fun, she’s loving it, eating loads and playing with it too 👍

After she’d finished she got a bit upset as she was totally shattered from having a hideously hot, sticky night with very little sleep so grandma took her and bathed her (it’s a huge help having grandma to stop for a few days!).

This morning M had oat & chia porridge with blueberries & raspberries mixed through.
I also topped it with frozen raspberries, coconut and chopped frozen blueberries to help cool it down and because it looked pretty ☺️ We’ve had a completely cray long weekend with it being T’s 4th birthday. Today’s back to normal (ish) and he’s off to preschool for the day. So I’ve got as I had a tiny bit more time this morning I wanted to make something ‘nice’ for me and M. 
I’ll post the video of her covering herself in it in a minute 😆

Spinach & Ricotta Pots

Serves 4

Ingredients

1 cup ricotta, crumbled 
8 eggs
1 100g packet spinach, chopped
2 handfuls of basil, chopped
1 x can diced tomatoes
1/4 cup parmesan cheese (or nutritional yeast)
2 tablespoons chia seeds (optional but great for omega-3 fats)

Served here with side salad of rocket, parmesan, red onion, olive oil and a splash of balsamic vinegar. 

Directions

Preheat the oven to 180⁰C. Whisk the eggs in a large bowl until pale. Add the ricotta, spinach, basil, canned tomatoes, parmesan cheese and chia seeds. Stir well and leave for 5 minutes while the mixture thickens a bit. 

Bake for 20-30 minutes or until cooked through and serve with the side salad. #BodyGoodFood

NUT FREE VEGAN MAC N CHEESE !
Easy, simple and so yum.

R E C I P E
Serves 4-6
INGREDIENTS
Vegan cheese sauce:
2 cups potatoes, peeled and chopped *I used Yukon gold*
2 cup carrots, peeled and chopped
1 can (15.5 ounce) great northern beans (aka white beans) rinsed and drained
3/4 cup unsweetened plain, unsweetened soy milk or water
5 tbsp nutritional yeast
1 tbsp lemon juice
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder

Other ingredients:
1 pound dried pasta, I used shell pasta but feel free to use gluten
free *Reserve 1/2 cup hot pasta water*
2 tbsp vegan butter, optional but i highly recommend (I use either
earth balance or miyokos)
2 tbsp nutritional yeast

Method:
1.Boil or steam the potatoes and carrots in a large pot for about 20 minutes or until soft.
2.In the meantime cook the pasta according to package directions.
3.Meanwhile place all the vegan cheese ingredients in a blender (including the cooked potatoes and carrots) and blend until smooth. Taste the sauce and adjust ingredients as needed.
4.Once the pasta is cooked, carefully spoon out about 1/2 cup hot pasta water into a cup and set aside. Then drain the pasta and return to pot. Add the vegan cheese sauce to the cooked pasta noddles, mix to combine, if the sauce seems to thick, this is when you can add some of the hot pasta water to loosen up the sauce. * If you’re using gluten free noodles, skip the pasta water and instead use regular hot water.*
5.Then add an additional 2 tablespoons of nutritional yeast, salt, pepper and 2 tbsp vegan butter (the vegan butter is optional) .
6.For leftovers… to reheat it, add a little bit of plant based milk & or vegan butter if the sauce is too thick.

I always look forward to chia pud for breakkie so that's why I'm calling this my 'chia up' breakfast bowl. I do recognise the fact it's not for everyone - if you aren't a fan of the gelatinous this is not on for you, but if you are partial to a bit of gloop you'll love it. It's super simple - whizz up a ripe banana and a can of coconut milk in the blender. Put into a Tupperware and shake in 75g of chia seeds. Give it a good stir and leave overnight. In the morning it's ready to go, just top with your fresh fruit, nuts and seeds of choice. You can also add a little cinnamon or vanilla extract to the mix if you want to pep it up, or my latest fave some fresh finely grated ginger.

It’s the berry best time of year 🍓🍒☀️ anyone else’s favorite season summer?! The heat, the fruits, the sandals and shorts.. I’m here for it. And here for berry crumble bars! Easy and delish, recipe below! Making a healthy filling is easy with either fresh or frozen fruit, and the crumble can be gluten free if you want! Recipe by @ambitiouskitchen 💞
Crusty crust: -1 egg
- 1/3 cup brown sugar (or sub 1/4 cup pure maple syrup)
- 1/2 cup rolled oats
- 2 cups whole wheat flour
- 2 tablespoons coconut flour
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ cup melted coconut oil
Mix everything in a bowl until crumble forms. 
FILLING: - 2 cups fresh or frozen raspberries or cherries
- 3 tablespoons honey (or sub pure maple syrup)
- 1 teaspoon vanilla extract
Pat down about 3/4 of the mix into a a baking dish. Place a medium pot over medium heat. Add in raspberries, honey, vanilla, and salt. Use a wooden spoon to press down and break apart the raspberries. Bring to a boil, then reduce heat and cook for 2-3 more minutes until mixture is thickened up a bit and no large raspberry pieces remain. Pour mixture over the crust and use a spoon to evenly spread.
Sprinkle the remaining topping evenly over the raspberry filling. Bake for 25-30 minutes or until filling is bubbly and topping is golden.

Keto body !!!!! Update I’m 169-171 currently ... still drinking my tea and my aloe which are working wonders on helping me keep my tummy flat . Clean eating ... not in ketosis anymore but also not gaining weight .
