Easy Chickpea Fried Rice (Serves 4-5)
Made with leftover vegetables and rice.
1 tablespoon tamari
1 tablespoon peanut butter
1 tablespoon maple syrup
1 tablespoon chilli sauce
2 cloves garlic, peeled and minced
1 teaspoon sesame oil
1 brown onion, peeled and diced
1/2 broccoli, cut into florets and halved
1/4 cauliflower, cut into florets and halved
1/2 red capsicum, diced
1 green chilli, sliced and deseeded
3/4 cup frozen peas
3 spring onion leaves, chopped
400 grams organic cooked chickpeas, washed and drained
Approximately 1 1/2 cups cooked 1-3 day old rice
Mix A) together and set aside.
For B), heat oil and cook onion until translucent. Add broccoli, cauliflower, chilli, and capsicum. Cook until broccoli turns dark green. Add frozen peas, spring onion, and chickpeas and cook for 1 minute. Add rice and A). Mix together well. Transfer to serving dish.
