Sweet Potato Wedges With Fresh Herbs and Garlicky Tahini Dip (Serves 2)
1 sweet potato, peeled and cut into wedges
A few dashes of onion powder
A few dashes of garlic powder
A few dashes of pepper
A handful of fresh basil and parsley leaves
1 teaspoon extra-virgin cold-pressed olive oil
1 1/2 tablespoons of tahini
1 clove of garlic, peeled and minced
4 tablespoons water
1 tablespoon lemon juice
A dash of pepper
A dash of cayenne pepper
2 spring onion leaves, chopped
Mix A) and transfer to oven for 30 minutes @ 200 C.
Mix B) until texture is like sauce. Dip A) in B). Enjoy this with your favourite vegan burger .
