Bit of meal prep for the toddler this morning. To me, there’s no excuse for children not to have a healthy meal. Don’t get me wrong, I’m not against junk/ connivence food, but the majority of the time it should be nutritious!.... This was SOOOO simple. And if I work out the cost of it, it probably was peanuts! So here we have some pasta, chicken, broccoli, spinach and mushroom cooked with some garlic, and a little sauce made up with some flour, stock cube and water! ‑ 9 brown pickling onions⁣
- 1.5kg beef sirloin or beef blade steak, I like to brown mine first🥩⁣
- 150g piece smoked speck 🥓⁣
- 400g baby carrots 🥕 ⁣
- 9 baby new potatoes, I use sweet potato🍠 ⁣
- 3 stalks celery ⁣
- 1 litre chicken stock🐓⁣

Today is batch-cooking day! 🕺💪 It takes more motivation than the training itself, IMO. It can be boring and you may be sick of the typical gym bro chicken & rice diet!? That's because it sucks and lacks imagination - thus leaving you depressed and out of love with the nutritional side of your training - which is the biggest part! Get creative, invest in a slow cooker, look up some healthy, protein-rich recipes that you can just throw some rice with...and boom! ..your next few days meals are squared away. Yum! It’s a bulk cooking kind of day. One huge batch of bread dough and one full pot of chicken. I really like the Instant Pot for making a big batch of chicken. The first night we usually have it shredded with homemade tangy barbecue sauce (Emeril’s recipe), then use the rest for a batch of chicken salad for sandwiches, salads, soups and on pizza. Our evenings are almost always busy but I’m thankful for quieter days at home to be prepared for them. We are very fussy on the mince meat we buy due to the large risk of possible cross-contamination when the meat is being minced and packed in the vicinity of crumbed products and other gluten foods. Something fabulous we learnt this week - Costco mince their own meat onsite and this is done in a complete clean room where the crumbed products are prepared in a seperate room (and no fillers, chemicals or preservatives are added)! I adore our local gluten free butcher but miss pork mince and when you are doing a big cook-up it’s nice to bulk buy beef and pork mince. Definitely double check your local Costco but the butcher assured us this is the case at ours 🙌

Carrots, sugar snap peas, cucumber.
@wellnourished Berry Nic Brownie & Gingerbread & @wholefood.happy seed bar & chocolate bliss ball.
Mr 10 had cantaloupe, grapes & tomatoes.
Miss 8 had cantaloupe, watermelon, strawberries & blueberries.

This is a big lunch but first thing kids do when they get home is finish off whatever is left before putting lunchboxes in dishwasher. Saves me making an after school snack and gets kids eating a variety, otherwise my son would eat carrots at school and after school & my daughter would only eat fruit all day long.

Some meals are more exciting than others, like this sugar-free version of BBQ pork, baked beans, and coleslaw. I love me some southern food, but it’s usually loaded with sugar in all sorts of hiding spots - collards, baked beans, coleslaw... it’s an impressive list. I made BBQ sauce by blending caramelized onions, carrots, and red peppers with tomato paste and a few other goodies. The beans were cooked along with some similar sweet vegetables, and I didn’t do anything special to the coleslaw other than leave out the added sugar. It. Was. #meatlessmonday de berenjenas a la parmesana más ligeras que otras veces (sin parmiggiano y con la base de berenjenas al horno) + alcachofas al horno
La receta de las alcachofas es facilísima (la vi por internet pero no recuerdo dónde): cortar el tallo y las puntas, lavar, poner en fuente de horno, golpear con el puño para que se abran un poco las hojas, echarles sal y Aove y hornear a 180 grados 45’. Luego antes de comer se quitan las hojas exteriores y listo! .

Tonights dinner is a firm family favourite - Red Lentil Soup. No Garnish, nothing fancy and no frills…just a good old healthy and hearty soup. It takes a maximum of 30 minutes to make and it is great freezer recipe, in fact I am freezing the leftovers for when tiny baby arrives arrives ❤️✨🥥 2 cups red lentils 
1 chopped white onion
3 cloves of chopped garlic 
1 tbsp minced ginger
2 medium finely chopped carrots
1/2 tsp chilli flakes
3 tbsp ground cumin
2 tbsp ground coriander 
1 tbsp paprika 
1/4 cup tomato puree 
1 can (400g) diced tomatoes
1 can coconut milk
8 cups of vegetable stock

Fry your carrots, onion, garlic and ginger in a pot with a bit of olive oil or water for about 5 minutes. Next add in all your spices and fry for a further 2 minutes.Then chuck in your dried lentils and vegetable stock and bring to the boil. Once this is boiling add your coconut milk, diced tomato and tomato puree and leave to cook for about 20 minutes...easy peasy, right?

Después / antes. Ya tocaba un asado de pollo 🍗😍 La receta no puede ser más fácil: 
Poner en una fuente de horno la verdura a rodajas: 2 patatas, 2 tomates, cebolla y 1 pimiento. Salpimentar, añadir cúrcuma y Aove. Encima poner un par de contramuslos de pollo a trozos grandes, también salpimentados y con hierbas (yo le he puesto tomillo, romero y estragón). Echar un chorreón más de Aove, vino blanco y una hoja de laurel. Todo al horno a 180-200 grados hasta que esté dorado y las patatas tiernas (1h30’ aprox.).
Para aprovechar el horno he puesto en 2 bandejas de horno con papel vegetal 3 berenjenas, 1 calabacín, 1 pimiento y 1 cebolla. Creo que caerán un par más de cosas hoy: verdura para la cena y parmiggiana para la comida de mañana 😁 .

Last week I only spent $14 on food because Mum is over and gave me some frozen meals. So this week was a little bit ‘bigger’ shop of $52. Keeping it pretty simple with a range of pizzas each night, I don’t use pizza base just a normal wrap for the base (so it basically a warm wrap every night 😂) mix of salami, ham and chicken for the protein and then capsicum, pickles, jalapeños, onion, tomato, olives and pineapple. For lunch I’ll be smashing out some bread with avo, tomato, feta and scrambled eggs 😝 also got some rip off nutrigrajn for when the parents come and made my own FroYo pops! The rest of the yoghurt and berries will be breakfast ☺️

The Beyond Burger is great but these are still my favourite! They also freeze well and stick together better than most other plant-based burgers. Plus, they contain an amazing array of #wholefoods.⁣

Ingredients:⁣
2 large sweet potatoes, mashed⁣
1 cup black beans⁣
1 cup cooked brown rice⁣
1/2 cup walnut meal⁣
1/2 cup finely diced green or red onion⁣
2 1/2 tsp ground cumin⁣
1 tsp smoked paprika⁣
1 tsp turmeric⁣
1/4 tsp each iodized salt and pepper ⁣
1/4 tsp chili powder⁣
⁣
Directions:⁣
1. Preheat oven to 400 degrees F.⁣
2. Cut sweet potatoes in half and place face down on parchment paper. Bake until soft (~30 min). Set oven to 375 when done. 
3. Cook rice. ⁣
4. Add black beans to bowl and mash half. ⁣
5. Add sweet potatoes to bowl, then mash. ⁣
6. Add remaining ingredients and mix well (feel free to use your hands!).⁣
7. Form into patties and place on parchment paper-lined baking sheet. ⁣
8. Bake for 30-45 minutes, gently flipping after 20 minutes. ⁣

I lost count of how many dumplings were made out of 2kg of pork mince, 2.5kg of gyoza skins, 350g of shitake mushrooms, 1.5kg of chopped Chinese cabbage, a knob of finely diced ginger, a heap of chopped chives and spring onion, a splash of Shaoxing wine, soya sauce and sesame oil, and salt and pepper to season, but there was A LOT! I decided it was time to get shit organised this year. Our life is hectic and the ‘juggle everything’ is real but I’m determined to make some parts of life easier on myself. 👍🏼👍🏼👍🏼 First I started decluttering Chaos HQ. It’s about 1/3 done but I’m already noticing the difference in how much easier it is to maintain the rooms that are clean and sorted. I can’t wait to slowly make my way through the whole house getting it all done. 👌🏼👌🏼👌🏼 Then I decided that taking a ‘Barefoot Investor’ approach to the finances would help sort out that area of our lives too. Although I haven’t set everything in place just yet, I can already see where changes will benefit the family. Just have to get through the first term playing catch up then it will be good to go! 🎉🎉🎉 Next on my agenda was to embrace the whole preprepared bulk cooking thing. So many afterschool activities means I run non stop and we often end up eating really late or take away junk and enough is enough. So Ive spent the last couple of mornings stocking the freezer with meals that I can just pull out, defrost and bang in the oven. So many of my awesome menopause sisters struggle when their bodies change. It's not just that we change physically but we also experience other changes to mood, sleep, cravings and our level of tolerating crap from other people - that's a good thing ;). The thing is we have expectations that believe we can "fix" these changes the same way we did in our 20's. When it comes to weight loss - counting points doesn't work for us anymore - nor do we feel like eating rice cakes and peanut butter & chicken and leaves three times a day. Who the heck wants that? The new strategy calls for gentler approach. We need to take the changes piece meal and add on to them. When I visited my Naturopath - yes this #Dietitian has her own practitioner too. I said to her I am so frigging tired that I can only manage two dietary changes - for me this means only one caffeinated coffee a day and increasing my cruciferous vegetables. When you are exhausted you need to work on one change at a time. As our energy levels come back we can add more to that change. So I'm wondering what is your menopause wish? I'll give you one change in the comment section to help you along your way. Don't you love meals that you can freeze? This #vegandietitian does! These #glutenfree #lentil meatballs can be eaten on their own or with your #wholewheat pasta dinner. ⁣

Ingredients:⁣
1/2 cup white onion, finely chopped⁣
2 cloves garlic, minced⁣
1 tsp parsley, minced⁣
1/4 tsp dried thyme⁣
1/4 tsp paprika⁣
1/2 cup dry brown lentils⁣
2 cups low sodium veg broth⁣
1 cup walnuts, finely chopped⁣
2 tbsp oat flour⁣
2 tbsp ground flax seed⁣
2 tbsp nooch⁣
2 tsp Bragg's⁣
1/4 tsp iodized salt⁣
⁣
Directions:⁣
1. Preheat oven to 400 F and line a baking sheet with parchment paper. ⁣
⁣
2. Add chopped onion with a few tbsp of veggie broth or water in a medium saucepan. Cook over medium heat until onion is soft. Stir in garlic, thyme, parsley, paprika, and lentils to coat.⁣
⁣
3. Add water or broth and bring to a boil over medium heat. Reduce heat to simmer and cover. Cook until water is absorbed (~30 minutes).⁣
⁣
4. Transfer lentil mixture to a bowl and set aside. Add walnuts to a food processor and mix until finely chopped.⁣
⁣
5. Add walnuts, flax, oat, nutritional yeast, Bragg's, and salt to lentil mixture. ⁣

6. Form mixture into balls (1-2 tbsp) and place in a single layer on baking sheet. Bake for 30 minutes until brown and crispy on the outside.⁣

The other night for dinner we had chicken mince with onion, cauliflower and carrot with coconut aminos and Apple cider vinegar. 🥘

It was so yum and there were leftovers. So straight into a jar and the next morning I warmed it up and straight into a thermos for Zander's school lunch. He loves leftovers for school and prefers them warm (even though most days it's around 30° outside). 🌞

If there was a lot of leftovers I'd have portioned it into small jars and put them in the freezer for future days. This way there's always something quick to put together for lunches (For him or me). I love leftovers!

So straight into a jar and the next morning I warmed it up and straight into a thermos for Zander's school lunch. He loves leftovers for school and prefers them warm (even though most days it's around 30° outside). 🌞 If there was a lot of leftovers I'd have portioned it into small jars and put them in the freezer for future days. As Olly is getting bigger i’m making sure his getting his chicken & fish in his diet. We are big fish lovers at home!
