Trying the whole “never skip a Monday thing” and now I’m lyin’ on the cold hard ground. I’ve been feeling such a workout rut the past month and am trying to shake myself out of it with one of my favorite little at home, full body workouts. You only need a set of free weights and your bod - it burns more than you’d think and takes about 30 minutes! My diet helps me lose weight but I don’t feel my best unless I’m also toning my muscles (3-4x a week is the goal). Currently I’m painfully aware how close bikini szn is (especially with 80 degree February Texas days) & I’m at the crossroads of starting BBG round 700 or spending $700 on workout classes. corn tortilla crepes - a little messy but delicious 🏼🥝
since I spend a lot of time at the hospital at the moment, I don’t have much time to prepare food & I often have to improvise my meals out of whatever I find in my kitchen I craved crepes this morning so when I found a bag of mini corn tortillas in my pantry I knew I had to try it out - I heated them in a pan, then filled them with different creams, fruit and chocolate sauce. I definitely prefer real crepes but the corn tortillas did the job. 🤗

Remove and submerge in buttermilk + garlic + rosemary + bay leaf for 6 hours. Remove and submerge in ap flour + salt + paprika for 6+ hours. Fry chicken. Flower power chia breakfast vibes from Hong Kong!! You know that feeling when nothing really works quite the way you want it to when you're trying to take pretty food photos?... First this chia pudding was way too runny, so I had to add more chia seeds in and leave it till this morning instead of eating it yesterday afternoon as a snack.
Then as I was in a rush for work, I ended up placing the kiwi caterpillars off centre, which I'm sure hurts your eyes too.
Simple recipe of
3.5 tbsp chia seeds
240 ml chocolate flavoured almond milk
If you're in a rush, just take it to work in a glass jar and eat with your morning coffee / tea.

This Belgian waffle was from a popular stall here in this beautiful little city of Brugge. (Swipe ️ to see some pretty buildings/architecture) The waffle itself had the textures of a croissant, but more compressed layer. I would say I prefer this “authentic” texture over the usual floppy ones you get at the malls but the taste itself was overly sweet to me. Tbh I feel like the “non-authentic” mall Belgian waffles are so different that it’s like a different type of waffle already, nonetheless,

Good morning Monday 🏻. Made this sweet little plate yesterday before heading to Sunday mass ✝️. Officially obsessed w/ this new vegan waffle recipe 🏻 Tweaked @safelydelish ’s cornmeal pancake recipe and added an extra 1/2 c of flour & a total of 6 tbsp of avo oil. IT’S PERFECT .

1 dl mjölk
1 paket jäst
1 msk honung
2 tsk salt
12-14 dl vetemjöl special
Blanda ut jästen i vätskan.
Tillsätt salt och honung.
Arbeta in mjölet allt eftersom till en lös geggig deg.
Låt jäsa under bakduk en timme.
Häll ut degen på mjöligt bord och platta till.
Skär ut degbitar i slarviga formar och lägg upp på plåt med bakplåtspapper.
Grädda direkt utan jäsning i 225 grader ca 10 min.

Straight summer sunshine in a bowl! Mango-coconut smoothie for one.
Cooking Tip: whenever I run out of nut milk, I add in chunks of frozen coconut meat (I find it at most grocery stores) and water and blend it together with the smoothie ingredients. It creates the EXACT same flavor as coconut milk! I promise. It’s delicious and a great trick for when you’re in a pinch 🏻
I’ve also added in my favorite coconut yogurt by my main squeeze @siggisdairy to keep the coconut flavor alive and make it extra creamy and nutritious (it’s low in sugar, so perfect for a morning breakfast)🏻

Make It ️ Cook 1/2 cup @woodstockfoods oats in 1 cup water on the stove according to package directions. 1 tbsp ground flax seed
1/2 tsp cinnamon
Pinch of salt
1 ripe banana, sliced up

A big bowl of cauliflower oats was definitely in order! I always tell myself I'm going to make something more interesting but I always end up with caulioats in my bowl lol •
To make it I just steam riced cauliflower, add in @silk cashew milk and @drinkorgain vegan vanilla protein and their greens powder to thicken them (this gives them a more oat like consistency imo). Then I top with my some of my favorite fruits/nuts/seeds and maple syrup and enjoy!! - 11 days ago
