Too long doesn't matter it's fun to read the descriptions here's my version How's this? Craving for Bombay Briyani??! Here's my version of this delicious Savoury rice dish that's loaded with spicy marinated Mutton, caramelized onions, and flavourful saffron rice which wi surely tantalize ur taste buds.
For my Briyani I 've simplified the order of operations, while retaining the traditional layered approach to assembling it. So grab ur aprons and get ready to prepare and relish the aromatic flavours.
Here's the recipe
1kg India Gate Basmathi rice
1kg Mutton medium sized pieces
4 large onions lengthwise slices
3 tbsp homamade ginger garlic paste
5 tbsp clarified ghee
8 green chillies, slitted
2 tbsp everest kashmiri red chilli powder
1tbsp everest turmeric powder
1cup thick or plain yoghurt
4 bay leaf
3 green cardamom
4 black cardamom
1/2 stick cinnamon
2 star anise
2 tsp caraway seeds
1/2 tsp nutmeg
1 tsp mace
For Garnish -
5-6 Fried cashew nuts
Few saffron strands soaked in 2tbsp warm milk.
5-6 pudina leaves
1. Wash and soak basmathi rice for atleast half an hour.
2.In a pressure cooker add ghee heat for a few seconds then add all whole garam masala and roast it for 1-2 min.
3.add onions and green chillies(slit it) saute it with spices until the onions turn slight brown colour.
4.add ginger garlic paste fry for few minutes then add Mutton pieces and cook it for 5 min then add red chilli powder and turmeric powder to it.
5.After the oil separates and floats add tomatoes and cook it till its done
6.Add mint leaves, coriander leaves, lemon juice and curd. stir the gravy well and then add 2 glass water in gravy and cook it well.
7.Pressure cook it, give 5 to 7 whistles till the mutton is tender and soft.
Method for assembling the Briyani rice-
1. Boil water in a pot add bayleaves ,mint leaves, cinnamon, salt and add rice and let it cook. Once done, strain it and keep aside.
2.ln a vessel, first spread little rice and then mutton gravy and repeat the layer again and at last on top of the rice put all the garnishing items mentioned.
3.Cover it with aluminium foil
