MEAT: I really love using ground beef in this recipe because it adds so much flavor. But you can totally use turkey or shredded chicken, too! If you have leftover rotisserie chicken this soup is a perfect way to use it up! Or skip the meat entirely and use extra beans or meatless crumbles for a vegetarian version.
SPICINESS: The base of this soup is not spicy because I have little ones, but you can totally make it spicier. Use a darker chili powder and more of it, add more cayenne pepper, add a spoonful of your favorite spicy salsa or a can or two of green chiles.
