🍊ORANGE JUICE 🍊 OJ 🍊VITAMIN C IMMUNE BOOSTER🍊

It's good to always wash your oranges right before you eat them! It will last longer but you are also removing any debris or bacteria from the rind right before you consume them 👍 I personally do this because pressing oranges CAN (but not always) get messy. I use my hands a lot and touch the rinds and I definitely wouldn't want any bacteria crossing to the juice I just pressed.

You can use a mix of apple cider vinegar and water for 20 minutes, wash with mild soap (at home we use low chemical soap from @seventhgeneration) so when we are in  a rush we use that or even @drbronner castile soap will work too!

Then, I just slice them in half and begin to press.
🔊 LITTLE TIP: When slicing in half, I make sure to slice away from the pedicel (flower stalk) because it grips onto the tip of the juice press a lot better and wont slip to the sides. I love my @breville machine it seriously removes all of the endocarp and juice sac of the oranges.

Oranges make up about 85% Vitamin C, that is why we always run to this when our immune system is down when sick but it also contains small amounts of potassium, vitamin A, vitamin b-6, calcium, and magnesium. It's always good to know what's in our food and how our food can help and heal us 🙏 "Food is thy medicine". Happy hump day veggie loves.

chocolate peanut butter pancakes 🍫🥞 | topped with soy yogurt and strawberries. this fluffy stack made with @womensbest flavdrops + protein will definitely fire up your week! 🔥🔥

chocolate protein pancakes:
-3/4 cup flour, use GF as needed
-2 tbsp cocoa powder
-1 serving vegan chocolate protein (I used @womensbest)
-1 tsp baking powder
-1 mashed banana
-1 tbsp peanut butter
-3/4 cup almond milk
-sweetener, to taste (I used flavdrops, but the banana + protein powder are already sweet)
In a bowl, whisk together the banana, peanut butter, milk, and flavdrops. Sift in the dry ingredients and mix until few lumps remain. Spoon the batter onto a greased pan on medium-low heat. Once bubbles appear, flip the pancakes and cook until both sides are browned. Enjoy!

Recipe 
Shortbread Crust
3/4 cup gluten free flour 
1/2 cup coconut flour 
1/4 cup coconut oil, melted
1/4 cup rice malt syrup 
Pinch of sea salt 
1 teaspoon pure vanilla extract

Strawberry curd 
2 cups strawberries 
1/3 cup rice malt syrup 
2 tbsp freshly squeezed lemon juice 
1 canned coconut milk, 400ml @chefschoicefoods 
1/4 cup cornstarch 
1 tsp agar agar powder .

Instructions
Prepare a 6x6 baking pan by lining it with parchment paper.
In a large mixing bowl, combine all base ingredients until you have a crumbly texture. Transfer base mixture to the lined baking pan, press firmly and bake at 180c for 20-25 minutes or until top is lightly golden with slightly darker edges.
To make the filling, 
Add strawberries and lemon juice medium-low heat in a saucepan. Cook until juices are released and fruit is softened, about 3-5 minutes. Strain through a very fine meshed strainer. 
Combine strawberry mixture rice malt syrup, coconut milk, cornstarch in a saucepan, bring to a boil, and whisk in the agar powder. Let it simmer for 3 minutes, until agar and blend are completely dissolved. Stirring constantly. .
Pour and spread the curd over the still warm shortbread crust.
Let it cool at room temp for about 10 minutes before transferring the bars to the refrigerator to chill and set for at least 4 hours or overnight. .

Raspberry Coconut Granola and Almond Milk - what a dream combo! Recipe below👇🏻
Ova granola s malinama i kokosom mi genijalno ide s @adezhrv biljnim napitkom od badema. Okusi su se baš savršeno složili. Već vidim da će i sutra doručak biti isti 😉😆
Za ovaj prefini doručak treba vam:
1 šalica granole
1 šalica #adez napitka od badema
A evo i sastojci za granolu:
Granola s malinama i kokosom
3.5 šalice zobenih pahuljica
1 šalica nasjeckanih badema
1/2 šalice kokosa
Prah ili esencija vanilije
Cimet
1/3 žličice soli
1/2 šalice rastopljenog kokosovog ulja
1/2 šalice agavinog sirupa
3 žlice limunovog soka
1 šalica malina
1/2 šalice kokos čipsa
Pomiješajte prvih 6 sastojaka u zdjeli (suhi) i odvojeno ulje, sirup i limun. Pa pomiješajte zajedno. Zatim umiješajte maline. Raširite u tankom sloju na protvan obložen papirom i pecite 20tak minuta na 170C. Promiješajte na pola pečenja da ne zagori. Par min prije kraja pečenja dodajte kokos čips.

The absolute joy when you realise that artificial chicken flavour is actually vegan! Ran home to make Samyang spicy “chicken” x2 noodles. Been a while but I’m back! 🙋‍♀️. I whipped up these lime and passion fruit raw cakes the other day and really love how they came out! Super fresh and creamy with avocado and cashews for the cream and as always refined sugar and gluten free. I’m actually just waiting for a new batch to set and really exited to share the recipe with you! .
Makes 3- 4 individual cakes. ( I used 7 cm silicon round moulds) 
Base :
25 gram walnuts.
25 gram sunflower seeds.
35 gram dates ( flesh of).
Pinch of Himalayan or sea salt. 
Method: Blend in food processor until its crumbly and sticks together when you press between your fingers. Push down into 3 individual cake moulds ( or small cake mound) and put in freezer to set while making the cream. .

Cream:
1/2 cup cashews soaked over night.
75 gram perfectly ripe avocado ( flesh of).
2 tbsp + 2 tsp raw honey or maple syrup.
1 1/2 tbsp plant milk. 
1 tbsp + 1 tsp lime juice.
1 tbsp + 1 tsp melted coconut oil. 
1/8 tsp pure vanilla extract. 
Method: Drain the cashews and blend with the rest of the ingredients in a vitamix blender or similar until completely silky smooth. It will be very thick so scoop it into the moulds over the base and and tap them hard a few times on the counter top. (lol) Let set in the freezer and take them out about 20-30 minutes before serving and top it with passion fruit pulp. Enjoy! 💚😘

Who loves cooking with spices? 👐 Tonight we will be enjoying sag aloo, a traditional, healthy Indian side dish, combined with potato, spinach, and spices. 🥘🥘🥘

Recipe:
- 2 sliced sweet potato
- 150g spinach
- 1 red onion
- 3 cloves garlic
- 1tsp turmeric
- 1tsp cumin
- 1tsp ginger
- 1tsp black pepper
- dash of lemon juice
- pinch of salt
.
Method:
In oil lightly fry onion and garlic, then add all spices and fry for 2-3 minutes.
Add the sweet potato to the pan, add water if needed and cook until potato is soft.
Finally place spinach in pan until cooked.

But Sainsbury's has come in to save the day. I saw the veggie ribz and got super excited. Not because of lolol ribz, but because my tempeh supply is now guaranteed again! The BBQ sauce is super sweet and sticky, but yeah the tempeh itself is top notch. Definitely worth picking up and giving it a try, especially if you're yet to join team tempeh

creamy curry noodles 🍜🥦 | super delicious comfort food, cooked in one pot! I actually made this in my Instant Pot, but seeing that many people don’t own one, I’ve written the stovetop recipe below. let me know if you’d like some Instant Pot recipes though! 💛
one-pot coconut curry noodles (serves 3)
-1 onion, diced
-3 cloves garlic, 1 tbsp ginger, 1 green chili; minced
-2-3 tbsp red curry paste, to taste
-1/4 tsp cayenne pepper
-1 cup (240mL) vegetable broth
-8 oz (225g) dry noodles, I used linguine
-14 oz (400ml) lite coconut milk
-4 cups chopped broccoli
-salt & pepper; to taste
In a large pot, sauté the onion, garlic, ginger, and chili for 4-5 minutes. Once fragrant, then add in the curry paste and cayenne with a splash of water, and incorporate well. Stir in coconut milk, broth, and noodles, salt, and pepper. Cover and cook on low heat for 5 minutes, then add broccoli and cover again for 5-10 minutes (depending on the type of noodles). Stir occasionally; once everything is cooked through, serve warm.
*For Instant Pot: follow everything above up to adding the noodles. Stir in broccoli along with the noodles + liquid + salt & pepper, then close the Instant Pot lid and cook on manual mode for 3-5 minutes. Release the pressure once the time is up, then stir well & serve warm.

I’ve been seeing a lot of barbecue tofu posts so I was influenced to make a bbq tofu sandwich with a side of seasoned purple sweet potato fries!
•
I sliced the tofu into small fillets and coated with diced herbs, sea salt and paprika. Fried each side in a non stick pan for 2 minutes a side. Then I covered each filet in bbq sauce and cooked for 1 more minute each side.
•
The bread is just a multigrain seed bread from @wholefoods, with @sirkensingtons chipotle  veganaise, lettuce and smashed avocado.
•
For the fries, the secret to getting crispy, baked fries is to soak them for at least an hour (ideally overnight) to release some of the excess starch 👌🏼🍠

Kung Pao Cauliflower “Chicken” with rice. 
INGREDIENTS:
2 small heads cauliflower (makes around 3 1/2 cups of florets)
1 tbsp soy sauce + 1 tsp cornstarch, mixed
__
3 tbsp oil 
4 cloves garlic, minced
1/4 cup sliced onion leeks
1 red bell pepper, sliced 
1 green bell pepper, sliced
1/4 cup peanuts, optional
Dried chili, optional
1/4 tsp Szechuan peppercorns, optional 
__
Sauce
1 tbsp Chinese black vinegar 
3 tbsp soy sauce
2 1/2 tbsp coconut sugar 
3 tsp cornstarch + 2 tbsp water 
__
DIRECTIONS:
1. Mix all the sauce ingredients together except the cornstarch and water.

2. In a bowl, marinate the cauliflower in soy sauce and cornstarch mix for 10-15 minutes.

3. Add 1 tbsp oil in a pan. Place the marinated cauliflower and cook for 15 minutes until tender. Cover while cooking for the cauliflower to cook in the steam. Set aside cooked cauliflower.

4. Add 2 tbsp of oil in a pan. Once hot, sauté the garlic, onion leeks, bell peppers, Szechuan peppers, and dried chili (if using). 5. Add in the sauce mixture. Once it boils, add in the cornstarch and water mixture. Lower heat and then mix well. Add in the cauliflower. Cook until the cauliflower absorbs the sauce and is thick.

A couple weeks ago, I shared quesadilla with rice in it.  The rice I used was a simple vegan coconut rice recipe that is very easy to make 🥥 .

--> Ingredients: When the first 2 ingredients are Chicory Root Fibre and Pea Protein Isolate, you expect a certain chalkiness, so don't expect it to taste miraculously dough-like and smooth. BUT, that being said, I was pleasantly surprised by the consistency and taste.
--> Taste: Not necessarily a toffee popcorn taste, just sweet, but the chocolate coating is really good. Chocolate chunks are nice, with lots of them, but be prepared for the interesting taste/texture of popcorn pieces... Normally only 1 or 2 chunks in each bar, but so far I've had an unpopped kernel (nearly broke a tooth!) and the other pieces have tasted soft and chewy (not terms you normally associate with popcorn).
--> Macros: At 259kcal and 7.6g Carbs, it's nice to see a lower carb option out there. 13g fat means it's on the higher end, but with 21g of protein, you can't really grumble when it comes to having a handy snack on standby.

Verdict: 8.5/10
- Will definitely be buying again as I can forgive the popcorn pieces based on all the other merits. I will definitely have to give the other 3 flavours a try to see what they're like.

I'm not really a sweets person. Give me potatoes, rice, and curries all day every day and I'm happy. And this especially goes for breakfast time. One of my go-to breakfasts lately has been Smashed Potato Waffles that I top with homemade Ketchup, fresh avocado, and our Pine Nut Spread. The struggle is real for vegans. Especially for those of us that go into these farms and stand face to face with the most oppressed, suffering and down trodden beings on the planet. 
Everytime I go to these farms the bit I fear the most is when Keith is about to open the door to a shed. It's because I have an idea of what I will see but I have no idea of how bad it will be, will it be the worst I have seen? Will it be as awful as the last place I have seen? Will it be so fucking horrible that I can't comprehend till I go inside? When we walk inside these places it's totally pitch black. Then I have to turn on our torch and that is the bit that gets me. From darkness to sudden light and seeing hundreds if not thousands of suffering faces. Everytime I go into a farm I shut down. I don't cry, I don't fall apart. I just dissociate. This stuff is so overwhelming it just forces one to step out of the body and zone out to get the job done. I have changed since doing this work. I have lost more of myself. A part of me has died.

Then on top of that I have to deal with carnist clowns and their comments like:

PROTEIN THOUGH.
IF WE DON'T EAT ANINALS THEY WILL OVERRUN THE PLANET THOUGH.
ANIMALS DON'T FEEL PAIN THOUGH.
PLANTS FEEL PAIN THOUGH. 
ANIMALS CAN'T SPEAK THOUGH. 
ANIMALS ARE NOT INTELLIGENT THOUGH. 
WE HAVE ALWAYS EATEN ANIMALS THOUGH.
FARMERS JOBS THOUGH.

🥗 Weekday Dinner Bowls 🥗 ⠀⠀
Sometimes throughout the busy week I find myself throwing random things in my fridge into a bowl and BOOM 💥 dinner! After doing this for quite some time I have finally discovered a method to the random toss things in a bowl madness. 🥬 
First off you are going to need some type of greens. My go to is usually massaged kale with a little olive oil and lemon
🥒
Second.. you need “The Crunch Factor” Some of my favourites that I usually have on hand are cucumber, celery or carrots!
🌾 
Third.. The Filler. 
This could be your favourite grain, this could be rice or quinoa for example. I am loving the tri-coloured quinoa lately or black rice 🍚 🍅 
Fourth..VEGGIES!!! Load them up!!! Go nuts the more the better. Honestly sometimes I feel like I have 10 different vegetables in my bowl. Probably do 🤷🏼‍♀️ 🍋 
Fifth. Dressing 
A simple homemade dressing trumps any store bought. I can’t remember the last time I had store bought dressing. I make tons of variations which usually consist of lemon, olive oil, tahini, garlic, apple cider vinegar. If you have those ingredients the sky is the limit! 🥢
Sixth; Protein
It’s no secret I am obsessed with tofu. It is one of the most versatile foods and one of my favourite. I often add it, tempeh or different types of legumes for an extra protein boost.

Last but not least... but like the best part.. CARBS ❤️ Toss some roasted potatoes/ sweet potatoes into your salad bowl. I pop mine in the oven while I prep everything else. Then they’re ready by the time you’re done cutting your raw veggies. 🥗 
The combo that I made for dinner tonight was a Smokey Paprika Tofu Bowl with Sriracha Lime Dressing 🌶

I often add it, tempeh or different types of legumes for an extra protein boost. 🥔 Last but not least... but like the best part.. CARBS ️ Toss some roasted potatoes/ sweet potatoes into your salad bowl. I pop mine in the oven while I prep everything else. When Autumn darkness falls, what we will remember are the small acts of kindness: a cake, a hug, an invitation to talk, and every single rose. These are all expressions of a nation coming together and caring about its people.🍰 I'm pretty healthy, so I eat a lot of vegetables and fish. But I'm a huge sweets fan. It's really bad. I love ice cream and cookies and cake and all that stuff. So on the weekends, I will definitely indulge.

Today I have a Popeye-inspired smoothie bowl. Just blend together spinach with apple, chia seeds, lime juice and coconut water, optional pea or soy protein and top with granola, dried goldenberries, goji berries, nuts, blueberries and blackberries. What do you think?⠀

Blackberries. Why eat them?⠀
*They are rich in antioxidants (esp. polyphenols) and anti-inflammatory compounds, which help defend agains free radical damage and so prevent chronic disease, including cancer. (Studies show that blackberries can slow the growth of cancer).⠀
