Can you imagine talking about Bengali food and not think of Biriyani? That plate of aromatic rice flavoured with saffron, garam masala, rose petals ..... I'm just drooling already. No Bengali feast is complete without biriyani and trust me when I say that we will find any given opportunity to hog on a plate of it! 🤤 . .

I.Ingredients for Mutton 200 gms mutton 50 gms Mustard oil 1 Small Dalchini 2 Tejpatta 2 Green elaichi 133 gms onion 17 gms Garlic paste 17 gms Ginger paste 37 gms Tomato Salt to taste A pinch of Haldi 1.5 gms Kashmiri mirch 200 ml water 15 gms ghee 3 gms Garam masala powder
II.Method Heat mustard oil in a cooker.Add elaichi,small dalchini,tejpatta. Then add onion chopped and brown it. Add ginger garlic paste,tomato,haldi,salt,red chilli powder,salt and saute well till oil separates Now add mutton and water.Cook for 4-5 whistles.Then take the mutton out in a pan and keep aside
III.Ingredients for Garam Masala 25 gms Dried rose petal 500 gms Dalchini 150 gms Elaichi 250 gms Javitri 8 Nutmeg 80 gms Shah jeera 100 gms white pepper Few Cloves
IV.Method Grind all and use
V.Ingredients for Biriyani rice 250 gms biryani rice Salt a pinch 2 clove 2 elaichi 1 small dalchini
VI.Ingredients for the Finishing Touch Oil 40 ml milk 50% strained mutton gravy 8 gms Biryani garam masala 2 gms Red chilli powder Salt Kewra water Rose water Meetha atar Lemon color Orange Color
VII.Method Soak rice and keep aside. After 20 minutes cook rice with salt, clove, elaichi and dalchini and strain. Leave to cool. Make mutton like mutton kosha till thin gravy stage. Put mutton only at the base of handi. Strain mutton gravy and take only the fine part of the gravy.
