FRENCH TOAST SANDWICH
🥪This is the ultimate bank holiday weekend breakfast from my new book with @Ronnie ! It’s got complex carbs, fibre, fruit, some healthy fat and protein from the nut butter and eggs which may surprise you results in a rather balanced sweet dish!
️ 4 slices of wholemeal bread
️ ½ banana, thinly sliced
️ 2 tbsp peanut butter
️ 60ml almond milk
️ 2 eggs
️ ½ tsp vanilla essence
️ ½ tsp cinnamon
️ 1 tbsp coconut oil
️ 2 tbsp maple syrup
️ 80g fresh berries
1️⃣First, make two peanut butter and banana sandwiches.
2️⃣Then, whisk together the almond milk, eggs, vanilla extract and cinnamon. Pour the mixture into a container large enough to fitthe sandwiches and soak each oneon both sides for about 10 seconds.
3️⃣Preheat a frying pan over a medium-high heatand grease with the coconut oil,to prevent the sandwiches from sticking. Cook each one for 3–4 minutes on each side, or until golden.
4️⃣Cut each sandwich in half, drizzle with maple syrup and finish with the fresh berries.
