Today was a roller coaster. And not only because it's bad week. Adulting is hard y'all. Namely taxes. They suck. But besides that, it was a beautiful day and I got to watch my husband play baseball, so I can't complain....see my stories from today about how much I enjoy watching him lol.
️Breakfast - Made a big delicious breakfast early this morning! 3 eggs scrambled with black beans and 1/4 cup of Tillamook shredded mozzarella, lots of spices (because if it ain't spicy, what's the point lol), and 3 slices of jennie-o turkey bacon. ️Lunch - For the baseball game, I made a flatout wrap with Boar's Head blackened turkey breast and one slice of Boar's Head chipotle Gouda. So easy and so tasty. And also had the WW sea salt hummus crisps as a snack. These are legit my fave thing I've gotten from the WW store so far. ️Dinner - So got some Foster Farms Mediterranean marinated chicken, cut up one breast super small and cooked in a pan with some minced garlic. Then threw a whole bag of Uncle Ben's brown rice, garbanzo beans, and a crunchy chili oil into the pan and mixed it all up. After cooked, put in a giant bowl and added reduced fat feta and sliced black olives. Holy crap it was good. I only ate half, so now I have lunch for tomorrow! Also all of my food is so monotone in color lol.
️Snack - Ate about half a pint of Halo Top chocolate chip cookie dough. Its 12sp total for the whole pint. Which is dumb. It's so good.

️ I have a shoot on Thursday (or Friday...not sure yet), so it's probably going to be a bit crazy pants this week. But I'm super excited for it! And I am pleased to say I haven't thought of the scale or where I'm at all day today. So that's a win for Erin
