Modified @highcarbhannah corn chowder to be #nightshadefree and it is so so delicious. I think it will be tasty as a cold packed lunch later this week when I’m at a conference.
Ingredients:
1 lb frozen corn
3 zucchini
1.5 lbs sweet potato (I used a Hannah so it wouldn’t be too sweet)
1 large onion
3 cloves garlic
2 cups water 
1.5 cups almond milk 
A ton of random spices I threw in the pot (celery seed, nutmeg, mustard, probably something else I’ve forgotten)
Cook in an #instantpot for 8 minutes then release after 10 minutes. Or just boil it on the stove until everything is soft. Blend it up and enjoy! It made about 90 ounces.

Baked salmon, roasted green beans and tender potatoes 🍽 I’m feeling really exhausted this week, but I knew my body was craving a home cooked meal. Because it’s been so busy, I really find myself needing to do things that I love - things that ground me in the present moment - things that really bring me joy. Cooking is one of those things ❤️ Here’s what I did ⬇️
Salmon: I used olive oil, pepper, a few red pepper flakes and dried rosemary. Cooked on 425 degrees Fahrenheit for ~20 min.

Potatoes: rinsed them, cubed them, & threw them in a pan with vegetable butter (dairy-free) and olive oil. Baked ~35-40 mins @ 425.

Green beans: tossed on a cookie sheet with olive oil and pepper. Baked for 10 mins @ 425.

Thai black beans anyone?! This is so so good, pals!! 🖤🖤🖤🖤Details 👉🏼 2 cups cooked black beans, 1 chopped medium onion, 2 small sweet potatoes (chopped), 1 tbspn olive oil, 1/2 cup water, 1/2 cup almond milk, 5 tbspn Thai roasted red chili paste, pinch of merken (or smoked chili powder), and salt and pepper to taste. Method 👉🏼 warm up your pan with the olive oil and sauté onion + sweet potatoes for 7 min. Then add everything else and cook for another 10-15 min (depending on how liquidy you want it). Taste it and add more spices to your taste if necessary. That’s it!! We had it with organic brown basmati rice and it was perfect. Now off to date night with hubby, I love to date him 😘 PS: sweet potatoes from the amazing @imperfectproduce ❤️
