chicken pesto spinach fettuccini 🤘🏼 this has been one of my favorite combos to get me through several meals each week. today i’ve got lots of work to catch up on, emails to reply to & some RD exam studying! HAPPY MONDAY!
8 oz spinach fettuccini
1/2 lb chicken breast
2 cups veggies (i have mushrooms, bell peppers, grape tomatoes, spinach)
1/2 cup pesto
parm and red pepper flakes, to garnish
to make: prepare fettuccini according to package instructions. when done, drain and place back into pot, then leave to side.
heat up 2 tsp oil in a large pan. cook chicken with salt and pepper, cook until juices run clear. add another 2 tsp oil into pan and cook together veggies. add cooked chicken and veggies with fettuccini and toss with 1/2 cup pesto finish it off with a sprinkle of parm and red pepper flakes on top! #winniesbalance - 20 minutes ago
