I try to keep my consumption of eggs under control, but no doubt I love them! It’s not always convenient to whip up eggs in the morning, but these sous vide egg bites can be prepared in advance, making life easy!
I’ve made these “Starbucks” style sous vide egg bites many times before. Normally I go with gruyere cheese to emulate the ones big coffee makes, but I had some cheese I wanted to finish off and bought some diced pancetta the other day I thought would be good substitute for the bacon I usually use.
I made four cups as a test and each cup has the equivalent of one egg, mozzarella and mimolette cheeses, a tablespoon of heavy cream (instead of cottage cheese since I forgot to pick that up!) and a bunch of the diced pancetta (skip any additional salt - the pancetta adds plenty). Cook in the sous vide at 167 degrees for 35-40 minutes, then cool with ice before placing in the fridge. In the morning, pop them under the broiler with a little additional cheese on top (optional) for 10-12 minutes and you have an incredibly tasty morning treat! - 7 hours ago
