As fate would have it #epigenetics allowed my chronic inflammation to manifest into PCOS. . Starting with the #eat pillar, and with the help of the awesome @thepcosnutritionist i decided to remove the common inflammatory foods from my diet, in a slow wean, to see the effects on my health. To my utter surprise, my acne, extra lbs, eczema, hair shedding, and ingrown toenails all disappeared in a few months! Getting my cycles regular was still a little way off, but i loved how i felt and what i started seeing in the mirror. . I dug into Dr. Natasha Campbell-McBride's #gapsdiet book to understand the science behind the gut and inflammation. Both my own #pcosprotocol experience, and new found love for medical literature, lead me to implement a whole army of changes for my little family, yielding amazing improvements for everyone's health. . Getting cozy on this snow day with some instant pot Chicken Tortilla Soup (df, gf) ️️ —— 1/4 onion finely chopped 4 cloves garlic minced 2 skinless chicken breasts 32oz chicken broth low sodium 3 tsp taco seasoning 1 chicken bouillon square 5 tb + 1 tsp tomato paste 1 can black beans- soaked 1 cup frozen corn 1 can Rotel Diced Tomatoes and Chili’s —— Sauté onions and garlic in the pot until fragrant. Add chicken breasts, broth, taco seasoning, bouillon, and tomato paste to the pot. Cook on high pressure for 10 mins and allow the steam to release slowly for another 10 mins. Remove chicken and shred. Put the pot back on sauté mode and add back the chicken, beans, corn, lime and Rotel sauce. Cook for 4-5 more minutes. —— I topped mine with 2 tb tortilla strips, 1 tsp shredded cheddar cheese, 2 tsp Light Daisy Sour Cream, and 0.5 oz avocado! - 11 days ago

Tonight’s dinner is another chef João exclusive. This is another one of his creations. The official dish is pan seared scallops, butternut squash and pomegranate risotto. Today the spotlight is on my love and biggest culinary inspiration by far, Chef Joao. This dish was cooked 6 years ago in September 2012. It is an original dish of his own creation that he called “Ras Salmon Papaya.” The first picture is the finished product and the second picture is a process shot. As you see in the second picture, he baked the salmon INSIDE the papaya on low heat for a few hours, then he used the papaya as a serving dish adding rice and fries for the final presentation. How is that for creative plating guys? Even though all these years have passed I still remember this dish clearly and can you tell that it is the most delicious salmon dish I have had in my life. You can feel the passion that he has for cooking in every dish that he makes.
