Getting cozy on this snow day with some instant pot Chicken Tortilla Soup (df, gf) ️️
1/4 onion finely chopped
4 cloves garlic minced
2 skinless chicken breasts
32oz chicken broth low sodium
3 tsp taco seasoning
1 chicken bouillon square
5 tb + 1 tsp tomato paste
1 can black beans- soaked
1 cup frozen corn
1 can Rotel Diced Tomatoes and Chili’s
Sauté onions and garlic in the pot until fragrant. Add chicken breasts, broth, taco seasoning, bouillon, and tomato paste to the pot. Cook on high pressure for 10 mins and allow the steam to release slowly for another 10 mins.
Remove chicken and shred. Put the pot back on sauté mode and add back the chicken, beans, corn, lime and Rotel sauce. Cook for 4-5 more minutes.
I topped mine with 2 tb tortilla strips, 1 tsp shredded cheddar cheese, 2 tsp Light Daisy Sour Cream, and 0.5 oz avocado! - 11 days ago
