Easy Chocolate Bundt Cake baked with one of my favorites bundt pan from @nordicwareusa ❤️

Recipe 
Dry
2 cups organic AP flour
1 cup raw cane sugar
2/3 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
Pinch of pink Himalayan salt salt

Wet
1 1/2 cup unsweetened soy milk
2/3 cup refined coconut oil
1 1/2 tsp apple cider vinegar 
First, mix soy milk with apple cider vinegar, set aside while you prepare other ingredients.
Mix all dry ingredients in a bowl with a wire whisk until well combined.
Next, mix all wet ingredients in a separate bowl, including the soy mixture. 
Pour the wet mixture to the dry mixture. With a spatula, mix everything until well incorporated . 
Pour the batter over prepared bundt pan and bake at preheated 175 degrees Celsius oven for about 35 minutes or until a toothpick inserts and it comes out clean.

Ultra Creamy Purple Sweet Potato Chia Pudding with Tapioca Pearl (also known as Sago)

Ingredients 
60 grams sweet potato
1/4 cup chia seeds
1 1/2 cup soy milk
Maple syrup (adjust to taste) •
1/4 cup sago
Additional soy milk
•

Method 
To prepare the sago:
In a small saucepan, add water (about 3-4 cups) until boiling. Add in the sago. Let it cook for couple of minutes then turn the heat off and close the lit. Set aside for about 30 minutes or until you no longer see white spots in the middle of the pearl. 
Drain them and place them straight in ice cold water. 
Gently separate them with your fingers. Drain and set aside until ready to use. (You could do it in advance and store them in the chiller) •
To make the chia pudding:
Steam potato until soft. Place it in the blender, add soy milk, blend until smooth. 
In a mason jar, place chia seeds and potato and soy mixture stir to combine well. Add maple syrup (adjust the sweetness to your liking)

Couple of hours later, add in sago and extra soy milk to adjust the consistency to your liking. I added about 1/2 cup additional soy milk. 
Enjoy!

When you have too many mangoes sitting on the counter and you don’t know what to do about it 😗
I decided to turn them into this “Mango Loaf Cake”.

Ingredients 
Dry
2 cups regular flour
2/3 cup granulated sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
•
Wet
300 gram mango purée 
1/2 cup canola oil
1/3 cup almond milk
•
Method
Mix all dry ingredients in bowl, set aside.
Cut mango into cubes, then place them into blender. Blend until smooth. 
Transfer mango purée to a medium-sized bowl, add in all other wet ingredients. Mix until everything just comes together. 
Gently pour in wet batter to dry mixture. Then mix with a spatula until everything is incorporated. 
Pour batter to prepared loaf pan. (I lined mine with parchment paper)

Bake at preheated oven (175 degrees Celsius) for 50 minutes or until a toothpick insert and it comes out clean. •

Quick & Easy Raspberry Muffin with Streusel Crumb Topping! ·

Ingredients 
For the Streusel 
1/2 cup flour
1/3 cup sugar 
40 grams dairy-free buttery spread
1/2 tsp cinnamon
•
For the Muffins (makes 6 muffins)
Dry
1 cup flour
1/3 cup granulated sugar
2 tsp baking powder
Pinch of salt
•
Wet
1/2 cup almond milk
1/4 cup canola oil
1/8 cup dairy-free yogurt
1 flaxegg (1tbsp flaxseed meal + 3tbsp water)
Handful of raspberries •
Method
Preheat oven to 200 degree Celsius 
To make the Streusel, simply mix all ingredients in a bowl with your hands until you get a coarse crumbs texture. Set aside.
•
To make the muffins: 
Mix flaxseed meal with water, set aside while you prepare other ingredients.
Place all dry ingredients in a bowl, mix well with a wire whisk.
Mix all wet ingredients in a separate bowl including flaxseed mixture.
Pour wet ingredients to dry ingredients, gently mix until everything just comes together, then fold in the raspberries. (Do not over-mix the batter)
•
Place muffin liner in muffin tin, divide the batter evenly (6 muffins) it should be almost all the way full for each muffin. 
Once ready, add generous amount of streusel on top of the muffin batter.
•
Turn the heat down to 180 degree Celsius, bake them for 20 mins or until a toothpick insert and it comes out clean. •

Healthy Fruity Soda is what you need for a hot summer! ☀️ It’s ‘Summer’ all year round where I reside so this is good 365 days of the year! 😚

Ingredients you’ll need to make this “Red Currant Refined Sugar-free Soda”🥤 •
Red currant syrup:
1 cup red currant 
4-5 tbsp maple syrup
Juice of 1 lime
•
Sparkling water
Crushed ice •
•

Method
Add red currants, maple syrup in a small saucepan over low heat, stir constantly with a heatproof spatula, press the red currants to the sides of the pan to release the juice. 
Cook the mixture until it has thickened slightly. (About 10 minutes)
Once ready, strain the mixture thru fine mesh shift, then stir in the lime juice. •
Add about 2 tbsp of red currant syrup to your glass, add crushed ice and sparkling water. 
Enjoy!

Cook the mixture until it has thickened slightly. 5-ingredient Exotic Southeast Asian Sweet Potato Bliss Balls with Melted Coconut Sugar Filling (also known as Onde-onde in the Malay/Indonesian language)

Ingredients 
250 grams purple sweet potato 🍠 
80 grams glutinous rice flour
3-4 tbsp water 
Coconut sugar
Coconut flakes

Method
Peel and cut the potatoes into big chunks, steam them over high heat for about 15 minutes or until soft. 
Mesh the cooked potatoes into purée form with a fork, then add in the rice flour, mix until just combined. Add in water (1 tbsp at a time) then neat the dough until everything is well incorporated. 
You will know the dough is ready when you get a soft, smooth ball that’s not too sticky to handle. 
Measure about 20 grams for each ball. Roughly shape each of them into a ball, then make an indentation with your thumb in the center, add about 1/2 tsp of coconut sugar to it (or more), then seal it tight and shape it well. Set aside. 
Repeat for the rest of the dough.

Once ready, boil them over simmering water until they float on top of the water. 
Remove them and roll them over coconut flakes. 
Enjoy them right away! 😁

Nothing beats waking up to a stack of Morning Pancakes! 😁
Sharing my boys’ all-time favorite gluten-free pancakes 🥞 
Happy Father’s Day, everyone! ❤️

Ingredients 
Dry (makes around 16 pancakes)
2 cups gluten free flour
3 tbsp raw cane sugar
1 1/2 tbsp baking powder
1 tsp salt
•
Wet
2 cups soy milk
2 tbsp apple cider vinegar
4 tbsp coconut oil
2 tsp pure vanilla extract •

Method
Mix soy milk with apple cider vinegar, set aside while you prepare other ingredients.
Place all dry ingredients in a bowl, combine everything well with a wire whisk.
In a separate bowl, place all wet ingredients, including soy milk mixture, combine well. 
Gently pour wet mixture to dry mixture, Mix until everything is just incorporated. (Don’t over mix the batter)
Let it sit for 5-10 minutes before using.
•
Pour about 1/3 cup of batter to a non-stick pan, cook on low heat for couple of minutes for each side.
Enjoy!

Sharing this “Earl Grey-Infused Cream Tart with Gluten-Free Shortbread Crust” that I made couple of months ago. Wish I could have this now!❣️

Ingredients for the filling 
2 cups soy milk
2 tbsp earl grey loose tea leaves 
1/3 cup caster sugar
1 1/2 tsp agar agar
Pinch of pink salt
1 1/2 cup full fat coconut milk
•
Method
Heat milk in a saucepan until it starts to simmer then turn the heat off. Add in earl grey tea leaves, gently stir to combine. Let it steep for 15-20minutes.
•
Once ready, discard the tea leaves. Place earl grey milk mixture with all other ingredients in small saucepan, let mixture cook for 15-20 minutes on medium low heat, stirring constantly.
•
Turn the heat off, pour mixture over cooled tart shell. Gently tap the tart on counter to release air bubbles. 
Let it cool at room temperature before transferring the tart to the chiller to set for couple of hours. 
Garnish with fresh fruits and Enjoy!! 😃

To make the oatmeal bowl:
1/2 cup rolled oats
1 1/2 cup water
Pinch of salt

3 tbsp maple syrup 
1/4 tsp cinnamon powder
Splash of almond milk

Place oats, water and salt in a saucepan over medium low heat. Let mixture cook for 10-15 minutes. Don’t forget to stir constantly.
Turn the heat off once the mixture has reached to your desired consistency. 
Stir in all other ingredients.

To make apple rosette:
2 Apples(thinly sliced)
Juice of half a lemon

Method
Place sliced apple and lemon juice in a saucepan, add water (enough to cover all the apple slices)
Let the mixture bowl on medium heat until the Apple slices are soft enough to handle.
